BREWED ORANGE CINNAMON COFFEE
I've had this recipe for at least 8 years. It has always intriqued me but I never got around to trying it. Attended a meeting where we were supposed to share homemade gift ideas and decided to take this as one of mine. I'm so glad I did!! I loved it! It smells wonderful brewing and it made a lightly spiced coffee that was just so comforting. Make sure to use the blender to mix it to help keep it from clumping in the coffee pot and not letting the water run through properly. Response to reviewer's question about using dried orange zest: I suspect it would make the coffee bitter. I have only used fresh & have never received any complaints about bitterness even from people who take theirs black.

Steps:
- Blend coffee and dry ingredients in a blender.
- Blend in flavoring and extracts.
- Scrape sides and blend 15 seconds more.
- Makes one 8-cup pot.
- Add sugar/sweetener and/or creamer as desired.
- To give as a gift: Place coffee mix in a filter. Place filter on a square of plastic wrap. Draw together with a ribbon.
ORANGE-CINNAMON COFFEE

Steps:
- Stud the strip of orange peel with whole cloves, 2 inches apart. In a copper saucepan, place the orange peel, cinnamon sticks, and both liqueurs. Warm them, then stick the end of the orange peel with a fork and hold it up over the pan. Light the liqueur on fire, then using a small ladle, pour the liqueur over the orange peel starting at the top. Let the liqueur drizzle down, spiraling down into the pan. Continue ladling for a few minutes. Douse the flame with a little coffee. Place the orange peel and cinnamon sticks on a side plate. Divide the liquid into 2 glasses, then top them off with more coffee. Garnish with whipped cream and the reserved cinnamon sticks.
HOT CINNAMON COFFEE
Perfect for a wintery morning, this recipe makes two small cups of coffee, reminiscent of the coffee you get in roadside stalls on highways here! You can add sugar if you want; I like it as it is.

- Mix the milk and water together in a pot and heat on a low flame.
- As the mixture just starts to boil, add the coffee powder and stir.
- Bring to a boil and switch off burner.
- Add cinnamon, stir, and pour into two small cups to serve.
SUNNY'S COLD BREW COCONUT COFFEE
Steps:
- In a large pitcher add the coffee, coconut and 3 cups water. Stir and refrigerate, stirring every few hours, at least 8 hours or up to overnight.
- Wet a paper towel or use a coffee filter placed in a fine mesh sieve over a pitcher. Pour the cold-brewed coffee into the lined sieve and allow it to drip into the pitcher beneath. Push through gently at the end to get the last bit of coffee. Add the evaporated milk to taste, then sweeten if desired and serve over ice.
COLD BREW ICED COFFEE
This recipe makes just two servings of cold brew, so if you're new to the method, it will be a good test batch to see exactly how strong you want your steep to be. Once you've found your sweet spot of brewing time, you can double, triple or even quadruple the yield. The strained concentrate will keep tightly sealed in the fridge for up to a week.

- Grind the beans in a coffee grinder on the coarse setting; the ground coffee should resemble coarse sugar or sand.
- Cut a 6-by-6-inch double thickness of cheesecloth. Put the coffee in the middle and tie tightly with kitchen twine. Put the sachet in a pint Mason jar or other 2-cup glass container. Add the cold water and seal tightly. (If you prefer, you can just add the coffee directly to the cold water and strain through cheesecloth after steeping.)
- Refrigerate and steep for at least 12 hours, though 18 to 24 hours is best. Remove the sachet, press to extract as much liquid as possible back into the jar and discard the sachet.
- To serve, pour equal parts cold brew concentrate and cold water over ice. Add milk and sweetener if using.
CINNAMON ORANGES
Steps:
- Peel oranges and slice into 1/4-inch thick slices. Place on a serving platter.
- Combine honey and cinnamon in a small bowl. Drizzle honey mixture over oranges and garnish with mint leaves.
COLD-BREWED ICED COFFEE
A version of this recipe was recently in the New York Times. I've been making it this way for years and it's so much better than the recipes which start with hot brewed coffee. I usually start this at night to have fresh iced coffee the next day.

- In a jar with a tight fitting lid combine coffee grounds and 4 1/2 cups cold water. Cover and shake well. Set aside at room temperature at least 12 hours.
- Strain the coffee twice through sieve lined with a coffee filter or cheesecloth. Pour the strained coffee into a large pitcher. Add the remaining 4 1/2 cups cold water. Serve with sweetened condensed milk or sugar and regular milk.
- Note: Make one batch to use for ice cubes. Freeze the coffee in ice cube trays and serve iced coffee with frozen coffee cubes so it doesn't get watered down.

TOASTED COCONUT COLD-BREW ICED COFFEE

- Make the toasted coconut syrup:
- Preheat oven to 350°F. Spread coconut on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes.
- Bring toasted coconut, sugar, honey, and 1/2 cup water to a low boil in a small saucepan. Remove from heat, cover, and let steep at least 30 minutes and up to 4 hours.
- Strain syrup through a fine-mesh sieve into a small bowl or resealable glass container, pushing down on solids to extract as much syrup as possible. You should have about 1/3 cup.
- Make the drink:
- Fill a glass with ice and add cold brew. Stir in desired amount of syrup (about 2 Tbsp.) Top with a splash of coconut milk.

- Toasted coconut syrup can be made 7 days ahead; store in an airtight container and chill.
COLD-BREWED COFFEE
Coffee brewed slowly in cold water is less acidic than hot brewed. You can use this concentrate straight over ice or microwave half a mug coffee and then add a half cup of boiling water for quick hot coffee. Develop your own ratio of coffee to water for your custom brew.

- Cover bowl with plastic wrap and steep at room temperature for 18 to 24 hours.

COLD BREWED COFFEE
I couldn't find any other cold brewed coffee recipes here, but I noticed the large number of iced coffee drink recipes. The benefit of having cold brewed coffee is that you don't have to wait for hot coffee to cool down, which results in an old, bitter coffee flavor, nor do you risk watering down your drink with a lot of melting ice. This is more of a guideline than a recipe. Amounts will depend on personal taste. Experiment with quantities to find a strength you enjoy. Prep (active) time refers to amount of time to measure, mix, shake and strain. Cooking (passive) time refers to time the coffee sits and brews.

- Fill a jug with the coffee and water, screw on the lid, and give a good shake. I use a clean Simply Apple bottle.
- Rest at room temperature for about 24 hours, giving a shake every now and then.
- Strain the coffee through a filter or a French press and decant into a clean jug or pitcher.
- Taste. If the coffee is too strong, dilute it to your liking. If it is too weak, add more coffee grounds and let sit out another day.
