- Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
- Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
- Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
- Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

- Preheat oven to 400.
- In large bowl, stir together barley and broth. Cover with vented plastic wrap, microwave on high 20-25 minutes or until most of the liquid is absorbed, stirring once.
- Meanwhile, in large skillet, heat 1 Tbsp olive oil on med-high. Add chicken; sprinkle with 1/4 tsp each salt and pepper. Cook 4 minutes or until golden, stirring once. With slotted spoon, transfer chicken to bowl.
- To skillet, add carrot, onion, and thyme. Cook 3 minutes, stirring.
- Add garlic to skillet, cook 30 seconds, stirring, then add mushrooms and water, scraping up browned bits. Cook 2 minutes; remove from heat.
- Stir in chicken and barley; transfer to shallow 3 qt baking dish.
- Toss broccoli with 1/8 tsp salt and remaining oil; arrange on top of barley mixture.
- Bake 20-25 minutes or until broccoli is tender.

- Clean the potatoes and cut into bite size pieces. I leave the skin on.
- Cut chicken into bit size pieces and brown in pan with a little olive oil. Spice with Salt and Pepper.

- Combine hot water, chicken bouillon and onion powder.
- Place rice in 13x9x2 pan and add hot water mixture.
- Stir.
- Add carrots in even layer on top of rice.
- Place broccoli florets evenly atop carrot layer.
- Place chicken breasts on top.
- Frozen breast pieces need not be thawed.
- Salt and pepper chicken pieces, if desired.
- Thoroughly mix soup and milk.
- Pour over chicken breasts.
- Cover tightly with aluminum foil and bake at 400F for 45-60 minutes or until chicken breasts are fully cooked.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt 1 stick butter in a large frying pan over medium heat. Add onion and garlic and saute until onion is translucent, about 5 minutes.
- Add flour and stir quickly until it is mixed like Play-Doh®. Quickly add broth, milk, and chicken bouillon; whisk until smooth. Remove from the heat and transfer to a large bowl. Add sour cream and both cheeses; stir until well mixed.
