BROCCOLI AND VELVEETA CASSEROLE

A friend gave me this recipe when I was looking for a vegetable dish to make with ham. My husband filled his plate three times during dinner and it is very hard for me to get him to eat his veggies! Everyone has loved making this dish because it is so easy and everyone goes back for seconds and thirds!

Broccoli and Velveeta Casserole image

Steps:

  • Cook broccoli and drain water.
  • Add Velvetta and cook until melted.
  • In a seperate pan melt butter, then remove from heat.
  • Add crumbled Ritz crackers to the butter and stir until mixed well.(You can crumble the crackers by hand or by putting them in a storage bag and crush with a rolling pin).
  • Spray a 1 3/4 quart cassarole dish with cooking spray.
  • Spoon in half the crackers into the dish.
  • Pour broccoli and cheese mixture in and cover with the rest of the crackers.
  • Bake for 15-20 minutes uncovered at 350 degrees or until top browns.

1 (16 ounce) bag frozen broccoli
1/2 a box of 16oz Ritz cracker
3/4 lb Velveeta cheese
1/2 cup butter

  • Saute onion in margarine.
  • add flour and water and bring to a low boil.
  • add cheese.
  • combine sause with broccoli.
  • add eggs and stir to combine.
  • place in greased casserole dish and cover with crushed crackers.
  • dot with butter.
  • bake at 325 for 30+ min and check center.

1/4 cup chopped onion
6 tablespoons margarine

1/2 cup water
8 ounces velveeta cheese spread in a glass jars
2 (10 ounce) boxes frozen chopped spinach, drained and thawed
3 eggs, beaten well
10 saltine crackers, to crumble on top (as many as you like)
3 tablespoons butter

  • 1. If using fresh broccoli, cut off the head of the broccoli and steam them in water till tender. Place in bowl and chop up (Save water) 2. If using frozen broccoli, prepare as directed (Save water) 3. In sauce pan cut up 1 stick of butter and cheese along with 1/2 cup of water from cooking broccoli and over low heat cook till melted. 4. In bowl melt 1/2 stick butter add mashed crackers and blend. 5. Mix cheese with broccoli. 6. In an 8 x 8 pan place broccoli mixture and sprinkle cracker mixture over top. 7.
