GARLIC AND HERB BROILED TOMATOES

- Preheat broiler to medium high.
- Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown
T-BONE STEAKS WITH CHOPPED GREEN GARNI, BROILED TOMATOES WITH CHEESE, OLIVES AND HERBS

- Preheat oven to 375 degrees F.
- Preheat a large griddle or large skillet over high heat. Brush the meat with extra-virgin olive oil, you'll need about 1/4 cup. Sear the steaks 2 minutes on each side, 3 at a time. Arrange steaks on baking sheet. When steaks are all seared off, transfer to oven and roast 5 to 6 minutes for medium doneness, subtract or add 2 minutes to that time for medium- rare to medium-well.
- Place tomatoes on a broiler pan and season with salt and pepper. Combine the bread, olives, parsley, sage and Romano in the food processor and pulse grind the mixture. Dress the mixture with some extra-virgin olive oil salt and pepper and fill the tomatoes.
- Dress chopped arugula and basil with a little lemon juice, extra-virgin olive oil, and salt and pepper.
- Remove steaks and let rest. Switch broiler on and broil tomatoes a couple of minutes to brown the cheese and bread crumbs on top.
- Serve steaks with greens on top and broiled tomatoes alongside.
BROILED TOMATOES WITH HORSERADISH

- 2. Combine crumbs, horseradish, lemon juice, salt and paprika.
- 3. Spread mixture over tomatoes halves.
- 4. Sprinkle with chopped parsley and the cheese.
- 5. Place in a broiler pan; broil 3 inches from heat 3-5 minutes until heated through.
- 6. Serve immediately.

I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

Steps:
- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

- Heat the oil and butter in a saucepan and add the onion and garlic. Cook, stirring, until the onion is wilted but not browned.
- Add the vinegar and stir. Add the tomatoes, salt and pepper. Bring to a boil and simmer about 5 minutes. If freshly grated horseradish is used, add it. If bottled horseradish is used, press it in a fine sieve and discard the liquid. Add the horseradish to the sauce and stir.

- Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
- Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
- Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
- Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

- Heat the olive oil in a small saucepan. Add the onions and garlic. Cook, stirring, until wilted, and then add the vinegar and bay leaf, if used. Cook until the vinegar is reduced to half.
- Add the tomatoes, tomato paste, salt and pepper. Cook, stirring often, about 5 minutes. Add the basil, if bay leaf is not used, and the horseradish and swirl in the butter. Remove the bay leaf, if used, and serve.
