- Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.

TANGY TUNA BURGERS

Steps:
- Chop the tuna into small chunks, then carry on chopping until the tuna is roughly minced. Tip the tuna into a bowl and mix with the garlic, ginger, soy sauce and coriander. Shape into two burgers, place on a plate, then freeze for 10 mins to firm up.
- Heat the oil in a non-stick frying pan, then cook the burgers for 1-2 mins on each side or until done to your liking. Serve the burgers in toasted buns with lettuce, tomato and avocado.

TUNA BURGERS
Life can't be about all beef. "Where's The Beef?" questions are fewer nowadays due to an influx of health concerns, as well as those that are watching their weight. The Longmeadow Farm is following suit and will openly and warmly embrace these new "burgers" to grace our "Saturday Lunch at the Farm" crowd. I wanted to produce a light(ish) tuna burger that made Dennis, Jerry, Uncle Dick, and my Dad feel as light as a Spring beetle floating around on a wind current after lunch. This recipe did it. Everyone was full, but not so full they wanted to clamber off to the backyard hammock, and pull their hat over their face. This gave them enough energy to have their giddy-up for all the many maelstroms that would undoubtedly follow them around for the afternoon. Go ahead, try them "Maryland" style with the use of our beloved "Old Bay Seasoning" and get ready to work hard this afternoon. Can be easily doubled for a big crowd.

Steps:
- Open and drain canned tuna.
- Mix together rest of ingredients except tuna, cheese and rolls.
- When mixing ingredients, I add one ingredient at a time, and gently but throughly mix all ingredients.
- Add tuna and gently fold together, and make firm patties.
- Heat skillet, that is sprayed with cooking spray or use 1 teaspoon of oil on bottom of pan.
- When heated on medium high heat, add each patty browning on each side for 5 minutes each.
- Add a piece of cheese on top to melt slightly.
- Open hamburger buns, and place in oven @350 degrees until toasted, (about 3/4 minutes).
- Put on buns and serve with fresh lettuce, tomato, and mustard.

TUNA BURGERS WITH GINGER AND SOY

- Preheat a nonstick griddle or a grill pan to high heat.
- Cube tuna into bite size pieces and place in a food processor. Pulse the processor to coarse-grind the tuna; it should take on the consistency of ground beef or turkey. Transfer tuna to a bowl. Combine ground tuna with garlic, ginger, dark soy sauce, scallions, red bell pepper, sesame oil, seasoning blend and black pepper. Form 4 large patties, 1 1/2 inches thick. Drizzle patties on both sides with light-in-color oil, such as canola, safflower or peanut oil.
- Cook tuna burgers 3 minutes on each side for rare, up to 6 minutes each side for well done. Preheat broiler.
- In a medium nonstick skillet over high heat, saute fresh shiitakes for 2 or 3 minutes in 1 tablespoon light oil -- 1 turn of the pan in a slow stream. Season mushrooms with salt and pepper.
- Open up the rolls and lightly toast them under the broiler. Spread mango chutney on the bottom of each bun. Top with tuna burger, shiitakes, red leaf lettuce. Spread wasabi mustard or sweet hot mustard on bun tops and set them in place. Serve with exotic chips and pickled ginger, if desired.
ISLAND AHI BURGERS WITH CILANTRO-CHILE-LIME SAUCE
Steps:
- Sauce: Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag and let stand 15 minutes. Peel peppers, remove stem and seeds, and dice. Measure 1/4 cup diced peppers into a small bowl and add mayonnaise, sour cream, cilantro, lime juice, ginger, garlic, and salt; stir well.
- Burgers: Meanwhile, in large bowl, beat egg and stir in panko, soy sauce, sugar, sesame oil, ginger, garlic, lime juice and zest, red pepper flakes, and salt. Add ahi and combine gently; form 4 patties.
- Heat vegetable oil on nonstick griddle over medium-high heat. Add patties and cook 3 to 4 minutes per side. Toast rolls under broiler during last few minutes of cooking. Spread sauce on roll bottom and top with onion, tomato, sprouts, and additional sauce. Add roll tops and devour.

I wanted something different than a plain tuna salad sandwich. I'm a huge fan of curries, tuna and curry are a wonderful combination.

- Drain tuna. Beat egg, add tuna. Sprinkle on the spices. Mix with fork until well blended. Add bread crumbs until mixture is damp, but not wet. Shape into patties. Cook in skillet with oil, I use coconut, until brown on both sides.
- Top with sharp cheddar or Swiss cheese, place under broiler either of the oven or toaster oven until cheese is bubbly.
- Serve with mayo, lettuce and fresh tomato on bread or a bun.
