  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. Unroll 1 tube of crescent dough and separate into triangles. Press onto bottom of prepared pan to form a crust, sealing seams well. Bake until set, 10-15 minutes., Meanwhile, in a large skillet, heat oil over medium-high heat. Add spinach and mushrooms; cook and stir until mushrooms are tender. Drain on several layers of paper towels, blotting well. In a large bowl, whisk 6 eggs, Parmesan cheese, Italian seasoning and pepper., Layer crust with half of each of the following: ham, salami, provolone cheese, red peppers and spinach mixture. Pour half of the egg mixture over top. Repeat layers; top with remaining egg mixture., On a work surface, unroll and separate remaining crescent dough into triangles. Press together to form a circle and seal seams; place over filling. Whisk remaining egg; brush over dough., Bake, uncovered, until a thermometer reads 160°, 1 to 1-1/4 hours, covering loosely with foil if needed to prevent overbrowning. Carefully loosen sides from pan with a knife; remove rim from pan. Let stand 20 minutes.

  • Allow both crust pouches to stand at room temperature 15 to 20 minutes. Preheat oven to 375°F. Place cookie sheet in oven to heat. Prepare pie crust according to package directions for two-crust pie using a 9-inch springform pan or 10-inch deep dish pie pan. Press 1 crust in bottom and up sides of pan. Sprinkle 1/3 cup of the cheese on bottom of crust. Top with half of ham, half of potatoes and half of onion slices. Distribute spinach evenly over onion. Top with 1/3 cup cheese and remaining ham, potatoes, and onion. Sprinkle remaining 1/3 cup cheese over onion. Gently press mixture into pan. Top with second crust; fold top crust over top edge of bottom crust and pinch to seal edges. Cut slits in crust. In small bowl, combine egg and water; mix well. Brush top crust with egg mixture. Place torte on preheated cookie sheet. Bake 45 to 60 minutes or until crust is deep golden brown and filling is thoroughly heated. Torte can be covered and refrigerated overnight before baking. Steps:

  • Preheat oven to 350, prepare a 9" spring form pan, double wrapping with tinfoil.
  • Unroll one tube of crescent rolls and separate into triangles, press into bottom of pan, sealing edges to make a crust, bake 10 to 15 minutes until set.
  • Meanwhile in large pan over medium high heat add spinach and mushrooms, stirring until soft, then remove from pan, drain and pat dry.
  • In large bowl whip 6 eggs, parmesan cheese, pepper and Italian seasoning.
  • Layer crust with each of ham, salami, provolone cheese and sweet peppers and mushroom mixture.
  • Pour half of egg mixture over top.
  • Repeat layers and top with remaining egg mixture.
  • On work table open remaining crescent rolls and seal edges, shape into top crust for tart and cover mixture.
  • Whisk remaining egg and brush top.
  • Bake uncovered for 1 hour - to - 1 1/4 hours or until temp reads 106°F Cover loosely with tinfoil if starts to over brown.
  • Carefully loosen rim of pan with a knife and remove from pan. Let stand 20 minutes before serving.

Steps:

  • Slice potatoes thinly.
  • Add olive oil to a deep 10" frying pan, add potatoes, chopped garlic, and red or white chopped onions.
  • Make sure there is enough oil to cover potatoes.
  • Saute uncovered until the potatoes are soft, but not brown.
  • Drain oil.
  • Save a couple tablespoons, discard the rest.
  • A little before the potatoes are cooked, mix the eggs and milk.
  • When potatoes are cooked and drained, add them to the eggs and milk mixture.
  • Let sit for 10-15 minutes.
  • Season mixture with a bit of salt and lots of black pepper.
  • Heat a 10" non-stick frying and add the two tablespoons of olive oil.
  • Add the potato and egg mixture and cook on low heat until the egg is set (fork will come out clean if inserted).
  • Flip the tortilla using the lid of a large pan: Place lid over the frying pan; turn pan over; slide the tortilla cooked side up back onto the frying pan to finish cooking, just a couple of minutes longer.
  • Remove from heat and let tortilla rest for 15 minutes before serving.
  • May be served warm or at room temperature.
  • Serve in pie like slices or cut into cubes if serving it to a larger crowd.
  • Note: rather than flipping the tortilla you can cook on top of the stove until the egg is set on the bottom and then transfer the pan to a 400 degree oven to finish.

Steps:

  • On lightly floured surface roll each sheet of puff pastry into a 12" square.
  • Lay 1 sheet puff pastry into a 10" pie pan; set aside.
  • In 10" skillet melt 1/4 cup of butter until sizzling.
  • Add potatoes, onion, 1/4 tsp salt and 1/4 tsp pepper.
  • Cover; cook over medium high heat, turning occasionally, until potatoes are lightly browned and crisply tender (12 to 15 minutes), then set them aside.
  • In cleaned skillet, melt 1 Tbsp butter until sizzling.
  • Meanwhile in a small bowl, stir together all omelet ingredients except the remaining 1 Tbsp of butter.
  • Pour half the omelet mixture (3/4 cup) into skillet with the sizzling 1 Tbsp of butter.
  • Cook over medium heat.
  • As omelet mixture sets, lift slightly with spatula to allow uncooked portion to flow underneath.
  • Continue cooking until set (2 to 3 min).
  • Slide omelet onto cookie sheet.
  • Repeat with remaining 1 Tbsp of butter and omelet mixture.
  • Layer ingredients into pie pan with puff pastry in the following order: 1 omelet, 1/4 pound ham, half of fried potatoes, 1 cup Cheddar cheese, remaining potatoes, ham, cheese and omelet.
  • Top with remaining sheet of puff pastry.
  • Press together edges of both sheets of puff pastry to form a rim; trim off excess puff pastry.
  • Cover; refrigerate overnight or heat oven to 375 degrees.
  • In small bowl stir together 1 egg and 1 Tbsp water; brush over puff pastry.
  • Bake for 30 to 35 minutes, or until golden brown.
  • Let stand 5 minutes; cut into wedges.
  • If torte is refrigerated overnight, let stand at room temperature 30 minutes before baking, then bake as directed above.

Steps:

  • Preheat oven to 350 degrees. Line a 9 inch springform pan with tin foil. Grease the foil with butter. Place one of the tortillas on the bottom of the pan. Cut the other 2 tortillas in half and drape them around the sides. The tortillas should overlap the top edge by one inch. Place olive oil in a large sauté pan, add the potatoes and cook for 5-6 minutes.
  • Beat the eggs, milk, cilantro, cumin and salt in a medium bowl. Place the potatoes on the bottom of the pan, followed by the cooked bacon, and bell pepper. Pour half of the egg mixture on top, followed by half the cheese. Lay the whole chiles over the top of the cheese and then the chopped tomato. Pour the rest of the eggs on top, followed by the rest of the cheese.
  • Bake in the oven 45 minutes or until the egg is set. Remove the springform pan and transfer to a plate. Lay avocado slices in a circular pattern over the top of the torte. Serve with a dollop of sour cream and salsa.

Steps:

  • Preheat oven to 350 degrees F. Spray an 8 1/2" spring form pan generously with non stick cooking spray. Roll out one sheet of the puff pastry to a 1/4" thick and cut out a 9" circle. Place this circle in the bottom of the spring form pan with the extra 1/2" going up the sides. Roll out the second piece of puff pastry to 1/4" thick and cut an 8" circle out. Set aside, this will be the "lid" of your torte. Roll out the remaining 2 sheets of puff pastry to a 1/4" thickness and cut rectangles out to wrap around the inside of the spring form pan leaving a 1" overhang at the top. Use water where puff pastry seams meet. Press the puff pastry against the pan for a smooth fit. Cover everything with plastic wrap and place in the refrigerator for 1 hour.
  • For Eggs: In a medium skillet, melt butter over low heat. In a medium mixing bowl, whisk the eggs, herbs, nutmeg, salt and pepper. Pour the egg mixture into the skillet and gently stir the eggs around in the pan constantly. The eggs should be loosely scrambled since they will cook again in the torte. Slide the eggs onto a plate and cover with plastic wrap. Cool eggs completely before using.
  • To Assemble the Torte: (Have egg wash on hand) Remove the pastry lined pan from the refrigerator. Layer the ingredients in this order, making sure to spread each layer to the edge of the spring form pan: 1. Half the eggs 2. Half the spinach 3. Half the cheese 4. Half the sausage 5. All the peppers 6. Remaining Sausage 7. Remaining Cheese 8. Remaining Spinach 9. Remaining Eggs
  • Fold the puff pastry overhang onto the ingredients. Brush with egg wash and then place the 8" circle or "lid" on top, gently pushing it down to seal the pastry along the sides. Cut a vent in the center using a sharp small knife and cut other decorative lines in the top to create a design. Make sure to only cut halfway through the pastry. Brush torte with egg wash and place in the refrigerator for 1 hour.
  • Place the torte on a baking tray. Brush again with the remaining egg wash. Bake for 1 hour and 15 minutes, or until the top is golden and puffed up. Remove from the oven and allow to rest until room temperature. Do not eat the torte hot or it will fall apart.
  • Remove from pan, slice and serve with a dipping mustard and a side salad.

  • Cut the top third off each roll; hollow out bottom, leaving a 1/2-in. shell (discard removed bread or save for another use). Place roll bottoms on an ungreased baking sheet., In a small bowl, combine the beans, sour cream, cilantro, lime juice, chipotle pepper sauce and salt. Spread 1/4 cup inside each roll.
