BRUSSELS SPROUTS MOJO

This is Dh's invention and my favorite way to eat Brussels sprouts. He calls all his culinary creations whatever-it-is mojo, hence; Brussels Sprouts Mojo. This dish cooks in 2 minutes so it's best to have all the ingredients measured out into a small bowl and waiting before beginning the cooking process.

Brussels Sprouts Mojo image

Steps:

  • Use a food chopper or food processor to roughly chop the Brussels sprouts, leaving a few larger pieces (up to 1/2"); heat the olive oil in a skillet over medium heat; add the sprouts and garlic and saute 1 minute.
  • Add the remaining ingredients and saute for 1 additional minute; total cook time for the dish is 2 minutes; do not overcook; serve hot.

2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup sun-dried tomato pesto
1/2 teaspoon ground coriander
1/2 teaspoon ground cardamom
1/2 teaspoon curry powder
2 tablespoons capers
1/4 teaspoon fresh ground black pepper
salt

sliced kalamata olive (optional)

Steps:

  • Heat the oil in a deep saucepan over medium heat. Add the garlic and cook until fragrant and pale golden brown, 1 to 2 minutes. Do not let brown too much, or the garlic will become bitter.
  • Stir in the sour orange juice, water, cumin, oregano, 1 teaspoon salt, and 1 teaspoon pepper. Stand back; the sauce may sputter. Bring the sauce to a rolling boil. Taste for seasoning, adding salt and pepper. Let cool to room temperature, then stir in the cilantro. Transfer the mojo to a jar or bottle with a tight-fitting lid. Serve in the jar and shake well before serving.

This makes a very nice side dish to your holiday feast, and I can't think of a main course, especially one made from some type of succulent animal, that this wouldn't pair wonderfully with.

Chef John's Roasted Brussels Sprouts image

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Fill a large pot with water and bring to a rolling boil over high heat. Place Brussels sprouts in water and cook for 2 minutes. Remove sprouts from water and transfer to ice water to cool. Drain and pat dry. Set aside.
  • Place onions in boiling water; cook until nearly tender, about 10 minutes. Remove from water, rinse with cold water, and pat dry. Set aside.
  • Melt butter in an ovenproof skillet over medium heat. Stir in Brussels sprouts and onions; toss with butter to coat. Stir in salt and black pepper; cook for 2 minutes.
  • Transfer skillet to the preheated oven and roast until golden and tender, 15 to 20 minutes. Garnish with lemon wedges and serve.
