SWEET KUGEL
Kugel, a traditional Jewish noodle custard dish, is a mainstay of Jewish holiday meals. Defined as a baked pudding or casserole (usually from noodles or potatoes) this one is my own version of kugel, which is adapted from a few recipes to make one that we really love. This is a rich and sweet kugel although they also come in a savory version.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
- While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.
- Bake in the preheated oven until slightly golden brown and custard has set, about 1 hour. Cool for 10 to 15 minutes before serving.

BUBBIE'S SWEET KUGEL
This was passed down to me from my mom. It has lots of fond memories. My boys love it and even their wives love it. I hope you enjoy it to. Don't forget fine noodles.

Steps:
- 1. First cook noodles and put into a large pan. When taking it I use the $1 throw aways. While the noodles are cooking put 1/2 of the remainder (except the raisins) ingredients into the blender. Pour over the noodles. Stir around very gently. Do same with rest of the ingredients. Then put the the raisins into this mixture. Sprinkle with cinnamon sugar mixture.
- 2. Bake 350 deg. for 1 hr. Let cool before cutting.
- 3. Forgot to say preheat oven but we all knew that. I was a bit nervous I guess.
BUBBIE'S SWEET KUGEL
A delicious kugel.

- 1. Pour melted butter over cooked noodles. Add creamed cream cheese. Add beaten egg yolks and add sour cream, sugar and vanilla. Mix well.
- 2. Bake at 325 degrees for 1-1/4 hours in a 3 quart greased casserole dish or until brown.

- Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. Bring a large pot of salted water to a boil. Add noodles; cook until al dente according to package instructions, about 6 minutes. Drain noodles; return to pot. Set aside.
- Put eggs and sour cream into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Mix in 3/4 cup sugar, 3/4 cup butter, and the cream cheese. Set aside.
- Heat 2 tablespoons butter in a large skillet over medium heat. Stir in 2 tablespoons sugar, the cinnamon, and nutmeg. Add apples; gently toss to coat. Cook, tossing occasionally, until soft and caramelized, 10 to 12 minutes. Stir apples into egg mixture; pour over noodles. Toss gently to combine. Pour into prepared dish. Drizzle remaining 2 tablespoons butter over noodles; sprinkle with remaining 2 tablespoons sugar.
- Bake until set and top is golden brown, about 30 minutes. Transfer to a wire rack; let stand 15 minutes before serving.
SWEET NOODLE KUGEL
This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.
