Steps:

  • Bring a large pot of salted water to a boil. Toss in the pearl onions and blanch for 3 minutes. Drain them out and then shock them in ice water to stop from over cooking. Drain again. Pinch the pearl onions out of their little skins and set aside.
  • In a 3-quart saucepan over medium heat, combine the chicken broth, 2 tablespoons of the butter, and 2 teaspoons of the dill. Once the liquid gets hot, add the pearl onions and peas. Cook and stir for 5 minutes until well coated and thickened slightly. Add the lemon juice, watercress, remaining butter, and dill; season with salt and pepper.

1 1/2 pounds pearl onions
1 cup chicken broth
1/4 cup (1/2 stick) unsalted butter
3 teaspoons chopped fresh dill
2 cups fresh sweet peas, shelled
1/2 lemon, juiced
1 small bunch watercress, washed and trimmed
Kosher salt and freshly ground black pepper

Steps:

  • In a medium skillet over moderate heat melt 2 tablespoons butter, add parsley and sliced beets. Warm through, season with salt and serve.
  • In a second skillet, also over moderate heat, melt remaining butter, add onions and warm through. Add peas and cook 5 minutes. Season with salt and transfer to a serving dish.
  • If your stovetop is too crowded when you find your pocket-of-time to deal with the sides, feel free to use your microwave for either of these dishes, loosely covering beets or peas. Microwave on high, but check them every couple of minutes -- you're just warming them through and melting the butter.

4 tablespoons butter, divided
2 tablespoons chopped fresh flat-leaf parsley
2 cans sliced beets, 15 ounces, drained
1 cup frozen pearl onions, defrosted
2 boxes frozen baby peas, 10 ounces each
Salt

MINTY PEAS & ONIONS

I have served this delicious side dish many times over the years. The original recipe came from one of my favorite community cookbooks,"Enough to Feed an Army." I usually serve this as an accompaniment to lamb as the mint flavor blends quite nicely with lamb. If you are in a hurry, you can simply melt the butter in the pan and proceed wthout waiting for it to brown. Since mint plays a major role in this recipe, is it highly recommend that you stick with fresh rather than dried mint. Tip: I snip my mint leaves with kitchen shears.
