BUTTERMILK CAKE

This is my favorite cake, and it is an old family recipe. The citrus glaze makes this cake moist and delicious.

Buttermilk Cake image

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a tube cake pan. The one I use has a removable bottom and a very large center hole.
  • Sift dry ingredients together.
  • Cream shortening and sugar. Add eggs one at a time. Mix until just incorporated.
  • Mix in dry ingredients until just incorporated.
  • Stir lemon juice and lemon extract into the buttermilk. Mix into cake batter just until incorporated.
  • Pour cake batter into the prepared tube cake pan, place pan on a half sheet covered with aluminum foil and bake for one hour.
  • While cake is cooking, mix together glaze ingredients.
  • When one hour is up, slowly pour glaze over cake and return cake to the oven for three more minutes.
  • Remove cake from oven and let sit for eight minutes. Then remove from pan.
  • Serve at room temperature. It's best prepared several hours or even a day ahead.

Steps:

  • LIne three 9 inch cake pans with waxed paper and lightly grease and flour the wax paper.
  • Mix the flour, soda, cinnamon and salt together.
  • Combine the eggs, sugar, oil, buttermilk, and vanilla in a mixing bowl and beat until smooth.
  • Add the dry ingredients gradually, mixing well after each addition. Fold in the carrots, pineapple, coconut and pecans.
  • Spoon into prepared pans. Bake at 350*F for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean (don't remove from the pans yet).
  • For the glaze, combine the sugar, butter, corn syrup, buttermilk and baking soda in a saucepan and mix well. Bring to a boil over medium high heat and boil for 4 minutes, stirring frequently. Remove from heat and stir in vanilla.
  • Drizzle the glaze over the hot cake layers. Cool the layers in the pans on a wire rack for 15 minutes. Remove from the pans and finish cooling on the rack competely.
  • For the frosting beat the butter and cream cheese at medium speed in a mixing bowl until light.
  • Add the icing sugar and vanilla and beat until smooth. Spread between the layers and over the top and side of the cake.

  • Sift together flour, soda, cinnamon and salt; set aside. Beat eggs in bowl until lemon-colored; beat in the sugar, oil, buttermilk and vanilla.   • Mix the yeast and water in the bowl of your mixer and let proof for 5-10 minutes.
  • Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
  • The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.
  • It will be fine.
  • Mix the salt, baking soda and sugar into 1 cup of the flour.
  • Pour over the yeast, and mix until thoroughly combined.
  • Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
  • Keep adding flour until the dough comes together and is no longer sticky.
  • Then let the dough knead in the machine 5-10 minutes.
  • Take out of the bowl and finish kneading by hand until the dough is smooth.
  • Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
  • Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
  • Set aside for the second rising.
  • Heat the oven to 350 degrees F.
  • Bake the loaves until done, about 30-45 minutes.
