CLASSIC BUTTERED GREEN BEANS

Classic Buttered Green Beans image

Steps:

  • Bring a large pot of salted water to a boil. Fill a large bowl with ice water; generously salt the water.
  • Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
  • Meanwhile, melt 2 tablespoons butter in a large wide pot over medium-high heat. Add the shallots, season with salt and cook, stirring, until slightly softened, 3 to 4 minutes.
  • Add the green beans to the pot; season with salt and pepper. Cook, stirring, until hot, 4 to 6 minutes. Remove from the heat and add 1 tablespoon water and the remaining 1 tablespoon butter; stir to coat.

Buttery Garlic Green Beans image

Steps:

  • Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
  • Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

Green Beans with Maple-Pecan Butter image

Steps:

  • Cook beans in large pot of boiling salted water , uncovered, until crisp-tender, 3 to 4 minutes. Using large slotted spoon, transfer beans to colander set in bowl of ice and cold water to stop cooking, then drain well. Return water to boil and repeat with remaining beans.
  • In small heavy skillet over moderate heat, heat 1 teaspoon oil until hot but not smoking. Add pecans and toast, stirring constantly, until light brown and fragrant, about 3 to 4 minutes. Remove from heat and set aside.
  • In electric mixer fitted with paddle attachment, whip butter until smooth, about 1 to 2 minutes. Add maple syrup and pecans, stirring by hand to incorporate. Set aside.
  • In 10-inch skillet over moderately high heat, heat 2 tablespoons canola oil until hot but not smoking. Add half green beans and sauté until hot, about 3 to 5 minutes. Transfer to large bowl and repeat with remaining beans and oil. Add maple-pecan butter and toss to combine. Sprinkle with salt and pepper and serve immediately.

1/2 cup (2 ounces) pecan halves
1 cup (2 sticks) unsalted butter, at room temperature
1/4 cup (2 ounces) maple syrup

Green Beans with Toasted Pecans image

Steps:

  • Preheat oven to 350 degrees. Place pecans on a rimmed baking sheet; toast until fragrant, 6 to 7 minutes.
  • Meanwhile, set a steamer basket in a large saucepan. Fill with enough water to come just below basket; bring to a simmer. Place green beans in basket; cover, and steam until crisp-tender, 5 to 7 minutes.
  • Transfer green beans to a serving platter; drizzle with oil, and season with salt and pepper. Serve topped with pecans.

Steps:

  • Steam beans for about 10 to 12 minutes or until just slightly crisp. Put the beans in a medium size serving bowl.
  • In a skillet, melt butter over medium heat, then cook until butter has browned.
  • Add pecans & cook for 2 to 3 minutes to toast the nuts.
  • Add butter mixture to green beans, tossing carefully to coat, then serve immediately.
