SPICY STIR-FRIED CABBAGE

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

  • Add the asparagus and cook, stirring every 30 seconds, until the carrots are starting to caramelize on the edges and are easily pierced by a fork, about 3 minutes.
  • Pour in the prepared sauce and cook, while stirring constantly, until the sauce has thickened to your liking, about 30 to 60 seconds. Remove from heat and serve as a side dish as-is, or turn it into a main dish by serving it with rice, fried eggs or tofu.

  • Whisk all the sauce ingredients together and set aside. If using thin slices of steak, pour half the sauce over the meat and allow it to marinate for a few hours. If choosing to serve over noodles, you can double the recipe for the sauce. You may not need all of it though.
  • Heat a large wok or sauté pan over high heat. Add two tablespoons of cooking oil to the pan and swirl to coat. When the oil is hot, add the vegetables and toss. Work in batches as needed, starting with vegetables that take longer to cook first, such as broccoli, carrots, asparagus, onions, and mushrooms. If needed, add a splash of water and cover with a lid for a couple minutes to steam. When they are about halfway through cooking, add the remaining vegetables that cook quickly, such as bell peppers and cabbage. Cook until the vegetables start to soften, but don’t overdo it. They should retain some crunch. Remove from pan and set aside.
  • Add another tablespoon of cooking oil to the pan and brown the venison (or whatever meat you’re using).
