CAIPIRINHA
It doesn't get simpler or more refreshing than a classic caipirinha, which is the national cocktail of Brazil. The sweet-tart drink calls for just three ingredients: lime, sugar, and cachaça, a sugarcane liquor that's like a smokier version of rum.

- Cut lime into 6 wedges. Squeeze the wedges into an old-fashioned glass, then add wedges. Add cachaça and sugar; use a spoon to muddle. Fill glass with ice, then stir well to chill.

- In a sturdy rocks glass, place lime wedges to halfway mark of glass. Add sugar and muddle limes and sugar together. Top glass with ice and add Cachaca. Stir vigorously.
CAIPIRINHA
Steps:
- Place the lime wedges and sugar in the bottom of a pitcher. Using a muddler or the handle of a wooden spoon, crush and mash the limes to release the oils and juice from the rind. When you have some nice juice in there and the sugar begins to dissolve, add the liquor and stir to combine. Fill lowball glasses with ice cubes and pour the cocktail over the ice and serve. Do not remove the pieces of crushed lime.

- Place all but 1 lime wedge in bottom of an old-fashioned glass with a little bit of crushed ice and simple syrup. Muddle all ingredients together until well blended. Fill the glass with crushed ice; pour in the Cachaca, the remaining simple syrup and the passion fruit puree. Shake vigorously and serve with a straw and the remaining lime wedge.

- Quarter 1 lime lengthwise, then cut each quarter in half crosswise and divide pieces between 2 (6-ounce) glasses.
- Add 1 tablespoon sugar to each glass, then muddle lime pieces by pounding and pressing with a wooden spoon until sugar is dissolved. Fill each glass with ice and add 3 tablespoons (1 1/2 ounces) cachaça to each, stirring well. Make 6 more cocktails in same manner.

Steps:
- Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
- Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.
