SLOW-COOKER CAJUN BEEF STEW

Come home to a delicious beef stew that's slow cooked with vegetables, Caribbean jerk marinade, Gold Medal® all-purpose flour - a perfect Cajun-style dinner.

Slow-Cooker Cajun Beef Stew image

Steps:

  • Pour marinade over beef in resealable food-storage plastic bag or glass or plastic dish; coat beef with marinade. Let stand 15 minutes.
  • Spray inside of 4- to 5-quart slow cooker with cooking spray. Place potatoes in slow cooker. Mix flour and Cajun seasoning; toss with beef and marinade, coating well. Place beef and marinade on potatoes. Add tomatoes.
  • Cover; cook on Low heat setting 7 to 8 hours.
  • Stir in stir-fry vegetables. Cover; cook on Low heat setting 15 to 30 minutes or until vegetables are tender.

Slow-Cooker Cajun Pot Roast with Maque Choux image

Steps:

  • Place Slow Cooker Liner inside 5- to 6 1/2-quart slow cooker, making sure liner fits snugly against bottom and side of bowl, and pulling top of liner over rim of bowl.
  • Rub entire surface of beef with Cajun seasoning; place in slow cooker. Top with corn, onion and bell pepper.
  • In small bowl, mix tomatoes, pepper and pepper sauce. Pour over vegetables and beef.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Remove beef from slow cooker to cutting board; cut into thin slices. Using slotted spoon, remove corn mixture and serve with beef.

CAJUN CROCK POT STEAK

Thought I'd try a variation on good old beef stew. I used Schwartz Blackened Cajun Seasoning but I'm sure any other cajun spices would do. I used casserole steak (chuck steak or braising steak) - use your own preferred joint. I also shredded my veg using a food processor as my SO doesn't like chunks of carrot. Herb Dumplings added a nice dimension to the dish. I'd suggest saffron rice as a good partner for this dish.

Steps:

  • Place about 8 tablespoons of seasoning in a large plastic bag.
  • Cut the steak into 1 inch cubes and place in the bag with the seasoning. Shake well.
  • Heat 2 tbsp oil in a frying pan and brown the steak over a high heat.
  • Thinly slice celery, carrots and onions and place in crock pot.
  • Add browned steak to crock pot.
  • Season with salt and pepper.
  • Pour stock over meat and stir all ingredients together.
  • Cook on low for 6-8 hours.
  • Optionally add dumplings for 15 minutes at end.
  • Garnish with a tablespoon of sour cream or creme fraiche and s sprig of parsley.

  • In a 5-to-6-quart slow cooker, place sausage, onion, garlic, celery, and bell pepper. Sprinkle with flour and toss to coat. Add tomatoes and their liquid, 1/2 cup water, and cayenne; season with salt. Cover and cook until vegetables are tender, 3 1/2 hours on high (or 7 hours on low). Add shrimp and okra, cover, and cook until shrimp are opaque throughout, 30 minutes (or 1 hour on low).
