Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Pierce potatoes with a fork and place on a baking sheet.
  • Bake in the preheated oven until tender, about 1 hour. Let cool completely, 15 to 20 minutes. Dice potatoes, leaving the skin on.
  • Heat a large cast iron frying pan or nonstick skillet over medium heat. Add olive oil. When hot, add onion, bell peppers, and garlic. Saute until veggies have softened, 3 to 5 minutes. Add potatoes, butter, thyme, Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown, 10 to 12 minutes. Top with parsley.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Cut each potato into 12 wedges; place in a large bowl. Toss potatoes with olive oil, garlic, salt, pepper, onion powder, and paprika. Arrange in a single layer on prepared baking sheet.
  • Bake in preheated oven for 20 minutes. Turn potatoes over and continue baking until golden and crisp, 25 to 30 minutes longer.

Cajun Fried Potatoes image

Steps:

  • Cut the potatoes into 1" cubes.
  • Add to boiling salted water.
  • Cook just until fork tender but not mushy, about 7 minutes.
  • Drain and cool.
  • Meanwhile, in a bowl, combine the salt, peppers, onion and garlic power, cumin and cayenne pepper.
  • Add the potatoes to the spices.
  • Toss to coat all pieces evenly-- You may do this much in advance and hold the potatoes as long as an hour before completing the dish.
  • Heat about 1" oil in a wok or deep skillet to about 350 degrees or until a piece of potato sizzles when added to the oil.
  • Add the potatoes.
  • Fry until golden brown on all sides, turning frequently.
  • Remove from Heat,drain and serve immediately.

This recipe comes from a Gourmet magazine way back in the 80's, and I still make them often my family loves these! If you want you can omit the Cajun seasoning! If you are lucky enough to own a mandoline, then use it to slice the potatoes. Your oven must be at 500 degrees to create a crispy potato slice! You could reduce the recipe to half if desired but why would you want too, you won't be able to stop eating these, they are that good, so better make the full amount!!!

Steps:

  • Pat the potato slices dry using paper towels.
  • Arrange the potato slices in one layer on two buttered cookie sheets pans.
  • Brush the slices with melted butter.

Spicy Cajun Potato Salad image

Steps:

  • Place potatoes in a Dutch oven; add water to cover. Cut onion in half crosswise; add one half to saucepan. Bring to a boil. Add lemon and salt to cooking water. Reduce heat; cook, uncovered, until potatoes tender, 5-6 minutes., Meanwhile, chop remaining onion. Combine with eggs, mayonnaise, dill pickle relish, mustard and Cajun seasoning., Drain potatoes; rinse under cold water. Discard onion and lemon. Add potatoes to egg mixture; gently toss until well mixed (do not overmix, or potatoes will break down). Refrigerate, covered, 1-2 hours. Just before serving, sprinkle with parsley and paprika.
