CAJUN RED BEANS

Delicious red beans. Serve it over rice with some cornbread. Yum!

Cajun Red Beans image

Steps:

  • Place the pinto beans into a large container and cover with several inches of cool water. Soak beans 15 minutes; drain and rinse.
  • Heat bacon grease in a large pot over medium-high heat. Cook and stir salt pork in hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to salt pork; cook and stir until the vegetables are soft, about 4 minutes.
  • Stir smoked sausage, bay leaves, parsley, and thyme into salt pork mixture; cook and stir until sausage is browned, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more.
  • Stir beans into sausage mixture and add enough water to cover the beans. Bring to a boil, remove from heat, and transfer beans mixture to a slow cooker.
  • Cook on High for 1 hour. Reduce to Low and cook until beans are tender, adding water as necessary, about 6 hours more.
  • Mash about 1/4 the beans against the side of the slow cooker crock with the back of a heavy spoon. Continue cooking on Low until beans are tender and creamy, 15 to 20 minutes more. Remove bay leaves.

Steps:

  • Sort beans and rinse with cold water. Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil 2 minutes. Remove from the heat; cover and let stand for 1 hour., Drain and rinse beans, discarding liquid. Return beans to Dutch oven. Add the ham bone, water and salt. Bring to a boil. Reduce heat; simmer, uncovered for 1 hour., Remove ham bone, when cool enough to handle, remove meat from bone and discard bone. Set meat aside. To the bean mixture, add the onions, green pepper, parsley, tomato sauce, garlic, Worcestershire sauce, pepper, cayenne, oregano, thyme and hot pepper sauce. Cook on low for 1 hour., Add sausage and reserved ham; cook 30 minutes longer or until heated through, stirring occasionally. Serve over rice.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Cook and stir ground beef and onion in a skillet over medium heat until beef is browned and onions are translucent, 10 to 15 minutes. Drain well.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Old Fashioned French Canadian Baked Beans image

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

Baked Beans - Cajun Style image

Steps:

  • Fry the bacon in a large frying pan until crisp. Let cool, then crumble the bacon, then mix all the ingredients together well except for the beans, then add beans and mix gently, so as not to mash up the beans. Precooked, crumbled bacon bits can be substituted for the freshly cooked bacon.
  • An alternative to bacon is to use smoked ham. Slice ham into 1/8 inch cubes and place in a mixing bowl. Sprinkle the ham with a mixture of one-quarter cup brown sugar and one-quarter cup white sugar, mix until the ham is well coated, then brown ham in a frying pan until the sugars caramelize and begin to turn brown/black. Then mix all ingredients except the beans together, then add beans and mix gently, so as to not mash up the beans.
  • Pour bean mixture into a 10 x 10 inch baking dish, cover with tin foil and bake at 300 degrees for 30 minutes or longer, until bubbling well around the edges of the baking dish, then remove tin foil, and broil at 400 degrees 5 to 10 minutes, until top browns/blackens slightly. This browning/blackening adds a very good caramelized flavor to the dish, and does not taste burned at all.
  • This makes a mild to medium spicy recipe, to make a very mild recipe, use only 1/4 teaspoon each of the three peppers.

Perfectly Baked Beans image

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

  • Saute the green pepper and onions in a little bacon grease before adding all ingredients to a crock pot.
  • Cook for 6 to 8 hours on low.

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
