Steps:

  • Combine chilled vegetables.
  • Combine remaining ingredients, stirring to dissolve sugar.
  • Pour dressing over vegetables.

1 1/2 cups red cabbage, finely shredded
1 1/2 cups green cabbage, finely shredded
1/4 cup onion, minced
1/3 cup mayonnaise
1 tablespoon vinegar
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon celery seed

I live in a wonderful Amish community and the ladies here are wonderful cooks. This is a lovely cole slaw recipe for those who like slaw without mayonnaise.

Steps:

  • In a large bowl, toss together the cabbage, onion, and 1 cup sugar. In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil. Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat. Refrigerate overnight for best flavor.

Citusy-sweet coleslaw inspired from Prevention Magazine's Healthy Home Cooking Cookbook. A great side to Kalua Pig or Pulled Pork. I generally just buy the coleslaw mix in a bag and add snow peas.

Calico Slaw With Poppyseed Dressing image

Steps:

  • In a dry skillet over medium heat cook poppy seeds just until they start to smell toasty. Cool.
  • In a salad bowl, combine the mayonnaise, orange juice concentrate, lemon juice, poppy seeds, honey and black pepper. Whisk until well blended.
  • Add the vegetables, tossing until well coated.
