Steps:

  • Spread kosher salt on a small plate. Moisten the rim of a pint glass with the lime wedge. Press the rim into the salt to rim the edge. Fill the glass with ice, add the lime wheel and set aside.
  • In a mixing glass, lightly muddle cilantro leaves and 2 of the jalapeno slices. Fill 2/3 of the way with ice and add the tequila, Cointreau, lime juice, orange juice, agave nectar and lemon juice. Cap the mixing glass with the shaker tin and shake vigorously for 10 to 15 seconds.
  • Strain the drink into the rimmed glass. Garnish with the cilantro sprig and the remaining 2 jalapeno slices and serve.

1.5 ounces blanco tequila, such as Santo
0.5 ounce Cointreau
1.5 ounces fresh lime juice
1.5 ounces fresh orange juice

Steps:

  • Add 3 to 4 ice cubes to a cocktail shaker, plus the lime juice, pineapple juice, coconut milk and honey. Cover and shake to dissolve the honey and chill the drink. Strain into a 15- to 20-ounce hurricane glass filled with crushed ice. Top off with the seltzer. Spear the maraschino cherries and pineapple wedges on a cocktail pick for the garnish.

CARIBE HILTON'S PIñA COLADA

It seems unimaginable that a drink as crowd-pleasing as the piña colada would inspire fierce debate. But to this day, no one can agree on the cocktail's exact origin - or even how to make it! The first theory involves the pirate Roberto Cofresí, who supposedly invented the drink to keep his sailors happy and prevent mutiny. Others swear it came from the bar at the Old San Juan restaurant Barrachina. But the most popular story traces the idea to the Caribe Hilton, where bartender Ramón "Monchito" Marrero supposedly created it in the ʼ50s as a family-friendly nonalcoholic drink. Back then, blenders weren't common, so the first piña coladas were made in a cocktail shaker. Marrero eventually added rum, and the recipe was later revised for blenders (see below). Try that version, or use a cocktail shaker and serve the drink over ice to get a real taste of the original!

  • Combine the rum, cream of coconut, heavy cream and pineapple juice in a blender. Add 1/2 cup crushed ice and blend for 15 seconds.
  • Serve in a 12-ounce glass and garnish with fresh pineapple and a maraschino cherry.

  • Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

  • Place pineapple pieces in a resealable plastic bag, laying them flat. Freeze until solid, at least 3 hours.
  • Shake cream of coconut and coconut milk in their cans before measuring. Purée pineapple, cream of coconut, coconut milk, white rum, lime juice, and 3 cups ice (about 15 oz.) in a blender until smooth. Transfer blender cup to freezer and freeze until mixture is thickened (it should be the consistency of a milkshake), 25–35 minutes.
  • Blend again until mixture is the perfect slushy frozen drink consistency. Divide among glasses. Top off each with ½ oz. dark rum, if using, and garnish each with a cherry and lime wedge. Do Ahead: Pineapple can be chopped 3 months ahead. Keep frozen.
