THE BEST AND EASIEST SPAGHETTI

This is the recipe my mother taught me when I was a teenager.

The Best and Easiest Spaghetti image

Steps:

  • Heat oil in a medium skillet. Add chopped onions, and cook until tender. Add ground beef, and brown. Stir in salt and turmeric. Dilute tomato paste in water, and add to the beef mixture. Cook for 30 minutes over medium heat.
  • Cook spaghetti in a large kettle of boiling salted water according to package directions. Drain well.
  • Combine beef mixture and noodles in a large kettle. Cover, and cook over medium heat for 30 to 40 minutes.

12 ounces spaghetti
1 onion, chopped
⅓ cup vegetable oil
½ teaspoon salt
¼ teaspoon ground turmeric
2 ½ tablespoons tomato paste
⅔ cup water

CALIENTE SPAGHETTI

I got this recipe from the back of a spaghetti box. One time, I made it as is. The next time, I added our family favorites to suit our own tastes. The family liked it much better, although they did like it as is.....just not as much! It is easily tailored to suit anybody's tastes and easy to make. We love canadian bacon and pepperoni so it was a pretty safe bet that we would like this recipe. Also, it is a nice change from regular old spaghetti.

Caliente Spaghetti image

Steps:

  • Cook pasta and drain.
  • Meanwhile, in a large preheated skillet, saute pepperoni, canadian bacon, green pepper, mushrooms, celery, onion, olives and tomatoes (including juice) breaking up the tomatoes with spoon.
  • Mix in garlic and spices and simmer on low for about 6 minutes.
  • Toss in cooked pasta.
  • Sprinkle with parmesan cheese (the kind you grate) and let sit on low until cheese melts (about 5 minutes).
  • Serve hot with a green salad and garlic bread.

6 ounces pepperoni, cut into thin strips
10 ounces Canadian bacon, cut into thin strips
3 cups canned whole tomatoes, undrained
3/4 tablespoon garlic powder or 1 1/2 tablespoons minced garlic
1 1/2 tablespoons crushed red pepper flakes
1/2 teaspoon black pepper
1 tablespoon dried basil
1 tablespoon dried oregano
1/3 cup grated parmesan cheese
1/2 cup chopped onion
1/2 cup chopped celery
8 button mushrooms, chopped
1 cup sliced black olives
1 3/4 cups chopped green peppers

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

2 1/2 cups large-diced cooked chicken
3 cups cooked rice
1 cup sliced celery
1 cup sliced green bell pepper
1 cup sliced onion
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed

  • Fill a large pan with water for boiling the spaghetti. Add the slice of onion, 2 whole garlic cloves, salt and bay leaves. Boil for 2 minutes, then add the spaghetti and cook according to the package directions. This is usually about 8 to 10 minutes. Taste a piece of spaghetti to see if it is fully cooked. Discard the onion, garlic and bay leaves.
  • Preheat the broiler to 500°. Place the poblanos, skin side up on the cookie sheet on the highest rack directly under the broiler. Broil till the skins are blackened and bubbled, between 3 and 5 minutes.
  • Remove and place in a bag to steam for 5 minutes. Remove and peel the skins off. Cut into strips.
