Apple Dumplings image

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

2 sticks (1 cup) salted butter, plus more for greasing the pan
2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough

She's warm, sweet, and a little flaky, but hey... who isn't these days!?!? Seriously, these little babies are my all-time favorite apple dessert now. They are warm, gooey, and the crunchy part with the sugar on top... good graccious! And easy - it really probably couldn't get any easier. You put some whipped cream or vanilla ice cream with these babies and prepare to be amazed.

Crescent Roll Apple Dumplings image

Steps:

  • Preheat oven to 350 degrees F.
  • Wash the apples, peel and cut into eight equal slices or segments.
  • Unwrap the crescent roll and separate the triangles.
  • Place a piece of apple on each triangle of dough (on a wider side) and roll it in a croissant. You can wrap it like a crescent roll or you can wrap the dough over the apple slice covering the whole apple (dumpling style), either way.
  • Place each dumpling in an 11 x 13-inch baking dish that has been sprayed with Pam or coated with a stick of butter.
  • In a sauce pan, combine water, butter, sugar, and vanilla and heat to a rolling boil.
  • Pour boiling mixture over the dumpling and sprinkle dumplings with cinnamon.
  • Place uncovered in 350 degree oven and bake for approximately 30 minutes, or until they become golden brown.
  • Serve immediately and top with cool whip. Or serve with a scoop of vanilla ice cream, mmmmm -- Ah-mazing !
  • WARNING: Prepare this dish at your own risk. It is beyond imaginable.
  • I actually cut the recipe in half unless I have a big group to serve. And then I use a square Pyrex dish when I cut it in half.

This was my grandmothers recipe and it has remained a family favorite... It should be served with roast pork, sauerkraut and a nice glass of beer. A very traditional way to eat the leftover dumplings the next day for breakfast or brunch is to chop them up into cubes, pan fry in a little butter; then add eggs and milk, and cook as if you are making scrambled eggs. It's great.

Knedliky - Czech Dumpling with Sauerkraut (Zeli) image

Steps:

  • In a large bowl, stir together the flour, baking soda, baking powder, salt and sugar. Make a well in the center, and pour in the eggs and 1 cup of milk. Stir to blend, and add enough additional milk to make a moist battery dough, not like pancake batter. Use a sturdy wooden spoon to beat the dough at least 200 strokes, rolling it over and over in the bowl until smooth and an occasional bubble appears on the surface. Add the dry white bread cubes, and stir into the dough until they disappear.
  • Bring a large pot of water to a boil. Place the dough onto a cheesecloth or white cotton cloth, and form into a loaf shape. Wrap the cloth around the loaf, and tie the ends.
  • Place the loaf into the boiling water, and cook for 45 minutes, turning the loaf over about half way through. Remove from the water, unwrap, and cover with a tea towel. Let stand for 10 minutes.
  • Fry bacon in a small skillet over medium-high heat until evenly browned. Set aside. Place the drained sauerkraut into a saucepan, and add enough water to cover the surface. Bring to a simmer over medium heat. Add bacon, and season with salt, pepper and caraway seeds. Stir together the cornstarch and water; mix into the sauerkraut, and simmer for a few minutes before removing from the heat.
  • Slice the dumpling loaf. Drizzle dumpling slices with some of the roast drippings from the pan. Serve with sauerkraut.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Set apples aside in a cold water bath while you prepare the dough.
  • Combine flour, baking powder, and salt in a medium mixing bowl. Add shortening and cut together with a pastry blender or a fork until crumbly. Add milk and stir until dough comes together.
  • Combine 1 cup brown sugar and cinnamon in another bowl. Separate dough into six equal portions and roll out to about 1/4-inch thickness. Place an apple in the center of each dough portion and fill the core with the cinnamon-sugar mixture. Wrap each apple in dough and place into the prepared pan.

The Best Chicken and Dumplings image

Steps:

  • For the chicken: Heat the oil in a large Dutch oven or heavy-bottomed pot with a lid over medium-high heat until shimmering. Add the carrots, celery, onion, 1/2 teaspoon salt and about 10 grinds black pepper and cook, stirring occasionally, until the vegetables just begin to soften but don't take on any color, 4 to 5 minutes.
  • Stir in the garlic and thyme and cook until fragrant, about 1 minute. Add the wine and simmer until completely evaporated, 4 to 5 minutes. Stir in the butter until completely melted. Sprinkle the flour over the vegetables and stir until it is completely incorporated and a sandy paste forms. Pour in the milk and stir until the flour has been smoothly incorporated into the liquid.
  • Add the chicken and the chicken stock to the pot and stir to combine. Bring the mixture to a boil then lower the heat to medium-low and simmer until the chicken is cooked through, 15 to 20 minutes. Stir in the parsley and peas and remove from the heat.
  • For the dumplings: Whisk together the flour, baking powder, garlic salt, 1/2 teaspoon salt and about 10 grinds black pepper in a medium bowl. Stir in the melted butter until just combined, then add the milk and stir until a ball of dough forms.

DUMPLINGS WITH A CRISPY SKIRT

Dumplings with a crispy skirt are essentially pan-fried dumplings with a thin and crisp outer layer (the "skirt") for an added texture. They're popular at izakayas throughout Japan, where they're called hanetsuki gyoza ("gyoza with wings") and at Chinese dumpling shops, where they're sometimes called binghua jianjiao ("ice-flower fried dumplings"). In this recipe, we developed a foolproof method for the skirt. Typically, it's made from a slurry of just flour and water but if the ratio is off, it can result in a thick skirt that is gummy. We added cornstarch and vinegar to the slurry to help prevent gluten from forming, resulting in a super thin and crisp skirt. The inspiration for the filling is the classic pork, napa cabbage and mushrooms found in frozen dumplings that always seem to be on sale at Asian markets. Feel free to fill the dumplings with your favorite combination of ingredients or swap in your favorite store-brought frozen dumplings. Many dumpling recipes direct you to mix the pork filling in one direction only. This helps develop the myosin, a type of protein, in the meat which makes the filling tender and hold together better when wrapping. We recommend Chinese black vinegar as a dipping sauce to provide acidity but you can make a soy vinegar dipping sauce instead (see Crispy Stuffed Lotus Root with Pork recipe) or simply drizzle the dumplings with soy sauce and sesame oil.

Dumplings with a Crispy Skirt image

Steps:

  • Soak the mushrooms in a medium bowl with 3 cups cool water. Stir to moisten the entire surface of the mushrooms. Set aside at room temperature for at least 3 hours and up to 4 hours.
  • When the mushrooms are nearly rehydrated, toss the cabbage with 1 tablespoon salt in a medium bowl and let sit until liquid pools at the bottom, about 15 minutes. Squeeze out as much water as possible from the cabbage in between two hands and transfer the cabbage to a large bowl. Add the pork, 1/2 cup of the mushroom soaking water, soy sauce, Shaoxing wine, sesame oil, sugar, white pepper and 1 teaspoon salt. Mix only in one direction using chopsticks until the pork-and-cabbage mixture starts to become sticky. Stir in 3 tablespoons of the neutral oil until evenly mixed.
  • Remove and discard the stems from the mushrooms. Finely chop the mushrooms and add to the pork filling. Stir until combined.
  • Set up a dumpling wrapping station with the following: a small bowl of cold water for sealing, the pork-and-cabbage filling, gyoza wrappers kept in the package and a large plate or baking sheet lined with plastic wrap to prevent the dumplings from sticking.
  • Place one gyoza wrapper in your palm, add 1 tablespoon of the filling to the center, then lightly dab the perimeter of the wrapper with cold water (I use my index finger). Fold into a half-moon shape and seal the midpoint, leaving the sides open. Make 2 pleats starting from the left side of the half-moon folding towards the midpoint then firmly press the pleated side to seal. Repeat the pleating on the right side. Firmly press to seal the dumpling and thin out the edge of the wrapper slightly. Place the finished dumplings on the prepared plate. Repeat with the remaining wrappers and filling (see Cook's Note).
  • Whisk together 1/2 cup cold water, 1 teaspoon of the cornstarch, 1/2 teaspoon of the flour and 1/4 teaspoon of the white vinegar in a small bowl until the slurry is smooth and free of lumps.
  • Heat the remaining 2 tablespoons neutral oil in a large nonstick skillet (about 11-inch) over medium-high heat until shimmering. Arrange 10 dumplings in a concentric circle or flower pattern (place the pointy end of each dumpling in the center of the skillet with the pleated side of the next dumpling facing the flat side of the previous one). Fry until the bottoms are golden brown, about 2 minutes. Stir the slurry before pouring into the skillet, cover with a lid, and cook over medium heat until most of the liquid has evaporated, about 5 minutes. Uncover and cook over medium heat, moving the skillet as needed for even browning, until the skirt looks dry, crisp and golden brown. Remove from the heat, place a large dinner plate over the skillet and carefully invert the dumplings onto the plate with the skirt-side up. Serve immediately with Chinese black vinegar, for dipping.
  • Repeat making the slurry and frying the remaining dumplings or freeze the dumplings on the plastic wrap-lined plate until frozen, then transfer the frozen dumplings to a freezer bag and freeze for up to 3 months.

  • Soak the dried apples in water eight hours or overnight.
  • Approximately 4 1/2 hours before serving, cover the ham with cold water and cook slowly for three hours.
  • Add the apples and the water they were soaking in to the ham.
  • Add the brown sugar and cook for an additional hour.
  • For the knepp, sift together the dry ingredients.

  • Place apples in the center of each round of dough. Spoon about 3 teaspoons of cinnamon sugar into the apple cores; fill each hole with a teaspoon of butter.
  • Wrap each apple up in pie dough, sealing the dough together at the top. Be careful not to pull and stretch it too tightly around the apple as you wrap, or it might break apart when it bakes; brush lightly with water if dough won't stick together. Even out the top and trim off any excess; shape into decorative leaves if desired.
  • Place wrapped apples seam-side up into the buttered baking dish. Ladle some sauce over each to cover completely.
  • Bake in the preheated oven, basting with sauce occasionally, until pastry is browned and cooked through and apples are tender, 50 to 60 minutes. Remove from the oven and baste with more sauce. Serve warm.

This is my favorite dish of all time, and one of the first I learned to make as a kid. My mother is the master of this dish and she taught me; her mother taught her, her mother's mother taught her, and that's how it works.

Steps:

  • Bring the stock to a simmer in a large stock pot over high heat. Add the chicken, keeping the stock at a gentle simmer. Cover and cook for one hour or until the meat is falling from the bone. Remove the chicken from the pot, keeping the stock at a simmer. Remove the skin and meat (in big chunks) from the chicken. Discard the skin and the bones. Reserve the meat and set aside.
  • In a large mixing bowl, combine the flour and the buttermilk and season with black pepper. If the dough looks dry, add a few tablespoons of hot broth and a few additional tablespoons of buttermilk. Fold the dough lightly (it will look wet). Season the broth with salt and pepper as needed. Wet a spoon in the simmering broth, then scoop a heaping tablespoon of dumpling mixture and gently drop it into the broth over the largest simmering bubbles. Working quickly, repeat with the rest of the batter. Reduce to a low simmer, cover and cook for 10-15 minutes.
  • As the dumplings cook, baste as needed with broth. It's important that the dumplings don't overlap or sit on top of each other. Carefully push some of the dumplings to the side and add the chicken. Cover and simmer for another minute to heat through.
  • Check that the dumplings are cooked through by using a cake tester. Place dumplings, chicken and broth in a bowl. Finish with black pepper.

Few recipes are so locally famous, yet so little known elsewhere, as schnitz un knepp from Pennsylvania. It combines two foods, ham and apples, that are staples of Pennsylvania Dutch cooking. Schnitz means "sliced, dried apples" and knepp is "dumpling". From Heritage of America Cookbook

Steps:

  • Remove skin and fat from outside of smoked pork.
  • Place pork in a Dutch oven; add enough water to cover meat.
  • Bring water to boiling; reduce heat.
  • Cover and simmer for 30 minutes.
  • Stir in dried apples and brown sugar.
  • Cover; simmer 1 hour more.
  • Meanwhile, for dumplings, in a bowl stir together flour, baking powder, and salt.
  • In a small bowl combine egg, milk, and melted margarine or butter.
  • Add to flour mixture; stir with a fork just till combined.
  • Drop dough by rounded tablespoonfuls in 10 mounds atop the simmering liquid.
  • Cover; simmer for 20 minutes (do not lift the cover) or till a toothpick inserted into the dumplings comes out clean.
  • Serve pork on a platter with the dumplings and apples.
  • Spoon a small amount of the remaining liquid over the meat.
  • Makes 8 to 10 servings.
