CANNELLINI BEAN SAUTE

This is an Emeril recipe that I modified to my tastes. It's really easy and a great side dish if you want to stray from the same old rice or potatoes. I usually cook chicken breasts in the pan first and use the oil/drippings as my starting base.

Cannellini Bean Saute image

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add onion and garlic, and cook until soft and fragrant, about 2 minutes.
  • Add beans, lemon juice, salt, pepper, italian seasonings, and a splash of white wine, and cook, stirring until softened and warmed through and liquid has reduced, about 3 minutes.
  • Serve warm with a sprinkle of parmesan cheese.

1/4 cup yellow onion, minced
1 1/2 teaspoons garlic, minced
4 teaspoons fresh lemon juice
1/2 teaspoon salt

dry white wine

TUSCAN CANNELLINI BEANS

An amazing side dish to Italian meats--pairs especially well with porchetta. I have a hard time finding dry cannellinis, so this recipe calls for canned. But if you can find the dry, I'd roll with that.

Tuscan Cannellini Beans image

Steps:

  • Melt butter in a medium pot over medium heat. Add pancetta; cook and stir until browned, about 3 minutes.
  • Remove pancetta but leave grease in the pot. Add onion, carrots, and celery. Saute until fragrant, about 3 minutes. Stir in garlic and cook for 30 seconds. Pour in white wine and bring to a boil while scraping up any browned bits from the pot with a wooden spoon. Boil until reduced by half, 6 to 8 minutes.
  • Add in cannellini beans, chicken stock, Parmesan cheese, cream, rosemary, oregano, red pepper flakes, bay leaf, salt, and pepper. Increase heat to high and bring to a boil. Reduce heat to a simmer. Cook, stirring every so often to avoid burning, until the cheese and starch in the beans have thickened the liquid to a sauce-like consistency, 45 minutes to 1 hour.

Sauteed Cannellini Beans image

Steps:

  • In a medium saute pan, cook the bell peppers and onions in 2 tablespoons olive oil until soft, 5 to 7 minutes. Add the garlic and cook until fragrant, another 2 minutes. Deglaze the pan with white wine and allow to boil for 1 to 2 minutes. Add the stock, herbs de provence, and beans and simmer for 20 minutes. Pour into shallow bowls and drizzle with the remaining olive oil. Serve with bread slices.

Sauteed Escarole with Garlic and Cannellini Beans image

Steps:

  • In a large skillet start the garlic in cold oil over moderately high heat, stirring, until it is golden. To the skillet add the escarole, and season with salt and pepper, to taste. Saute the mixture, stirring, for 1 minute. Cook the mixture, covered, over moderately low heat for 4 minutes, or until the escarole is tender, stir in the cannellini beans. Heat through.

2 pounds escarole, trimmed, cut into bite-size pieces, rinsed well, and spun dry

CANNELLINI-BEAN PASTA WITH BEURRE BLANC

This recipe, like so many great straightforward, inexpensive go-tos, starts with little more than a can of beans - then transforms it into a luxurious meal. Cannellini-Bean Pasta With Beurre Blanc image

Steps:

  • Add the beans and stock to a large pot, and bring to a boil. Turn the heat down, and let simmer for 20 minutes.
  • While the beans cook, combine the wine, vinegar, shallot and butter in a small saucepan. Simmer over medium-low for about 15 minutes, shaking the pan as the liquid reduces to keep it from burning. Turn off the heat, and set the beurre blanc aside.
  • Stir the pasta into the beans and cook, stirring occasionally, until the pasta is cooked through, about 10 more minutes. Stir in the beurre blanc, and season generously with salt and pepper. Serve with a little grated cheese on top.

Sauteed Kale With Cannellini Beans image

Steps:

  • In a large skillet or wok heat the oil. Add the garlic and chili and sauté for about a minute.
  • Add the kale in large handfuls - add a handful, stir it until it begins to wilt and then add the next handful, and so on.
  • Pour the vegetable broth over all. Stir and simmer until the broth is almost completely boiled away - approximately 10 minutes.
  • Add the beans and gently stir through until heated.
  • Serve immediately.

Sauteed Greens with Cannellini Beans and Garlic image

Steps:

  • Heat 4 tablespoons oil in large nonstick skillet over medium heat. Add garlic and dried crushed pepper; stir until garlic is pale golden, about 1 minute. Add greens by large handfuls; stir just until beginning to wilt before adding more, tossing with tongs to coat with oil.
  • Add 1 cup broth, cover, and simmer until greens are just tender, adding more broth by tablespoonfuls if dry, 1 to 10 minutes, depending on type of greens. Add beans; simmer uncovered until beans are heated through and liquid is almost absorbed, about 2 minutes. Stir in 1 teaspoon vinegar. Season with salt and pepper, and more vinegar if desired; drizzle with remaining 1 tablespoon oil and serve.

  • When the oil is ready, add the chopped onion and garlic, and sauté for about 5-7 minutes. Be careful not to let the garlic burn. Adjust the heat if necessary.
  • Next, add the white beans, tarragon, salt and pepper. Sauté for another 3-5 minutes or so. When sautéing the beans, use a gentle hand so as not to mash the beans up to mush.
  • When the pan begins to “dry up” (again, I’m not a professional chef, so I don’t know what the proper terminology is), add the white wine. Continue to sauté for another four minute or five minutes, or six minutes… or however long it takes for the wine to reduce down and the beans to be cooked to your liking. Taste a bean. If you like it, then it’s done.
