Hasselback Tomato Caprese image

Steps:

  • Slice a thin piece off the stem end of the tomato and discard. Remove a thin piece of flesh off the long side of the tomato to make it stable. Place wooden skewers or chopsticks along the sides of the tomato. Using a sharp knife, make 4 wedge slices into the tomato, until the blade of the knife hits the skewers/chopsticks.
  • Lay a small basil leaf on top each piece of mozzarella cheese. Gently push the slice of cheese and basil leaf into each crevice cut in the tomato. The cheese should be flush with the top of the tomato. Repeat this process with the remaining tomatoes, mozzarella and basil until all 4 tomatoes have been stuffed.
  • Place the tomatoes onto a serving platter. Drizzle generously with the oil and balsamic glaze. Sprinkle with flakey sea salt and freshly cracked black pepper to serve.

Steps:

  • In a small saucepan, over low heat, simmer balsamic vinegar until it is reduced by half and is thick, sweet and syrupy. Transfer to a small bowl and set aside.
  • Thread 1 tomato, 1/2 basil leaf and 1 bocconcini onto each toothpick. Arrange on a serving plate and lightly drizzle with the baslamic syrup.
  • Note: Pearl bocconcini are marble size balls of fresh mozzarella cheese sold in tubs in the dairy isle.

  • Mix tomatoes, mozzarella, oil and vinegar in medium bowl. Season with salt and pepper. Let stand 1 hour at room temperature. Mix in basil.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain.
  • Return pasta to pot. Add tomato mixture and toss gently to blend. Season with salt and pepper and serve.

Flatbread Caprese image

Steps:

  • Combine the flour, yeast, salt, and sugar in a large bowl and whisk to blend. Stir in the water until it forms a rough dough.
  • Sprinkle some flour on a counter or cutting board. Turn the dough out onto the board and sprinkle a bit more flour on top. Knead until the dough becomes a smooth ball, 3 to 4 minutes, adding more flour as needed. Cover the dough with a clean kitchen towel and let it rest on the counter for 10 minutes.
  • Preheat the oven to 425°F. Coat a baking sheet with cooking spray.
  • Roll the dough into a 9x17-inch rectangle and transfer it to the prepared pan. Drizzle with a bit of olive oil and bake 18 to 20 minutes, until golden and crisp.
  • Meanwhile, combine the mozzarella and tomatoes in a medium bowl. Slice the basil into ribbons and add them to the bowl, along with a drizzle of oil. Season with salt.
  • Transfer the flatbread to a cutting board. Scatter the mozzarella mixture on top. Cut the flatbread lengthwise, then into triangles. Serve immediately.

Directions. Slice the Mozzarella a little less that 1/2" thick. Slice the tomatoes a little less that 1/2" thick. Place the Mozzarella and the tomatoes in a platter. Chop one leaf of fresh basil and sprinkle over the tomatoes and Mozzarella. Sprinkle some good EV olive oil. Sprinkle oregano. Add salt as desired.
