  • Melt butter in large skillet over medium heat; sprinkle sugar over. Stir until sugar begins to melt, about 1 minute. Add apples. Sauté until apples are brown and tender and juices form, about 10 minutes. Add cream and simmer until sauce thickens slightly, about 2 minutes. (Can be prepared 3 hours ahead. Let stand at room temperature. Rewarm apples over medium heat.)

Steps:

  • For the streusel: Preheat the oven to 325 degrees F.
  • In a bowl, combine flour, butter, brown sugar, pecans, and smoked paprika. Using a pastry cutter, work the ingredients until a rough dough forms; it should resemble large grains. Place streusel on a nonstick baking sheet in an even layer. Sprinkle cheese on top. Bake until toasty, 15 to 20 minutes.
  • For the apples: In a medium saute pan over medium-high heat, add sugar and water. Bring to a low boil, occasionally swirling the pan. Cook for about 5 minutes until the sugar begins to caramelize and turn light brown to amber; this is a little tricky and needs to be watched continuously. When light brown, turn off the heat, add the apples and whisky, and light on fire to flambe (this will cook out some of the alcohol). Then, add the butter and turn heat to low. Cook the apples, flipping to coat in the caramel, about 2 to 4 minutes. In the meantime, combine the whipped cream and creme fraiche.
  • To assemble: Divide the apples into 8 individual serving dishes or one large one. Top with a dollop of the creme fraiche mixture and some streusel.

Steps:

  • Preheat the oven to 425 degrees F. On a floured work surface, roll the puff pastry into a 12-inch square, about 1/8 inch thick. Invert a 10-inch ovenproof nonstick skillet over the pastry. Using the skillet as a guide, cut a 10-inch round of pastry. Transfer to a plate and chill in the refrigerator while you prepare the apples.
  • Heat the same skillet over medium heat. Melt the butter and then sprinkle over the sugar and add the apples on top. Once the sugar begins to melt, adjust the heat so the juices bubble rapidly. Cook, stirring, until the apples are tender and juices are light golden brown, 10 to 12 minutes. Remove from the heat.
  • Using a fork, nudge the apples into 2 concentric circles (it doesn't have to be perfect) in the skillet. Top with the chilled pastry round and tuck the edges in. Gently prick the pastry in 4 or 5 places with a fork. Bake for 10 minutes at 425 degrees F, until the pastry is puffed and light golden. Reduce the oven temperature to 375 degrees F and bake until the pastry is a deep golden brown, 10 to 12 minutes more. Remove from the oven and let sit 10 minutes.
  • To unmold, place a serving plate over the skillet and quickly but carefully flip the pan. The tart will unmold onto the plate, and if a few apple slices stick to the pan, return them to the tart. Let cool at least 20 minutes before serving to allow the syrup to sink into the tart. Serve slightly warm or at room temperature.

  • Add the sugar, corn syrup and 1/2 cup water to a small saucepan over medium-high heat. Stir a few times before the sugar begins to boil to combine the ingredients. Attach a candy thermometer to the inside of the pan and bring the syrup to a boil. Cook until the syrup begins to turn an amber color, then swirl the syrup to even out the color. Continue to cook until the syrup is a deep amber and the thermometer reads between 375 and 380 degrees F, then remove from the heat. Carefully pour in the cream and gently whisk to combine. Stir in the butter, vanilla and a pinch of salt until smooth. Keep off the heat but keep the thermometer attached to the pan.
  • Pierce the apples through the stem ends about halfway through with candy apple sticks. Line a baking sheet with parchment and lightly spray with nonstick cooking spray.
  • When the temperature of the caramel reads around 190 degrees F, dip an apple, using the stick as a handle and swirling to coat completely. Allow excess caramel to drip off the bottom and use a spatula to help remove any large amount of caramel, as it will pool around the apple when you set it down to cool on the lined baking sheet. Repeat with the remaining apples, gently heating the caramel on the stovetop over low heat, stirring, if it gets too thick for dipping.   • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Steps:

  • Wash the apples (peel them if you prefer), cut into half and core them, then cut into wedges or slices. Do this as you cook the caramel, if you're brave. Otherwise deal with the apples in advance so that you can pay full attention to the caramel.
  • Put the sugar in a large, heavy-bottomed pan over high heat. Heat the pan until the sugar starts to melt. Stir if you see clumps. The sugar will start to caramelize quickly at some point. If it looks like it's going to turn black, take the pan off the heat for a while to cool it down. Continue melting the sugar until a thick caramel is formed.
  • Tip all the sliced apples into the pan at once - be careful, the pot might spit at you when the moisture of the apples hits the caramel, and spitting caramel is very painful. Stir to combine the apple and caramel as well as you can - the caramel will stick to the bottom of the pan and your stirring spatula quite a lot, but don't worry about it. If your spatula gets too caramel-clogged, scrape it off gently with the back of a knife and plop the caramel lump back into the pot. It will melt as the apple cooks down and exudes more moisture.
  • Lower the heat to low, just high enough so that the pan is barely simmering. Put a lid on, and let it cook, stirring occasionally, for about 30 to 40 minutes, until the apple slices are permeated with caramel color, as in the photo above. At this point add the optional butter and stir it in, though it's fine to leave it out if you wish.
  • Let cool thoroughly before packing into jars or plastic containers. Since this doesn't have the large amount of sugar that jams or preserves do, it needs to be stored in the refrigerator, where it will keep for a couple of weeks, or the freezer, where it should keep for a month or more.
  • Eat hot or cold. It's really nice on pancakes, with or without butter, as well as on oatmeal, yogurt, ice cream, or on its own. In the manga they lightly toast some bread, pile the apple on top with a pat of butter, and toast it again in a toaster oven.

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Roast Goose with Caramelized Apples image

Steps:

  • Position rack in bottom third of oven and preheat to 350°F.
  • Rinse goose inside and out; pat dry with paper towels.
  • Sprinkle inside and out with salt and pepper.
  • Using knife, cut small slits all over goose; place garlic slices into slits.
  • Place goose on rack, breast side down, in large roasting pan.
  • Roast goose 2 hours 45 minutes, basting occasionally with drippings and removing excess fat; reserve 6 tablespoons fat.
  • Turn goose over.
  • Roast until brown and thermometer inserted into thickest part of thigh registers 175°F, basting occasionally with drippings, about 45 minutes longer.
  • Meanwhile, toss apples and lemon juice in large bowl.
  • Pour 6 tablespoons goose fat into 15 x 10 x 2-inch glass baking dish.
  • Using slotted spoon, transfer apples to baking dish; toss apples in goose fat.
  • Add sugar, Calvados and cinnamon to apples; toss.
  • Bake apples alongside goose until very tender and golden, about 1 hour.
  • Serve goose with caramelized apples.

Easy Caramel Apples image

Steps:

  • Line a baking sheet with waxed paper and coat with cooking spray. In a medium saucepan, bring sugar and 1/2 cup water to a boil over high. Reduce to medium-high and simmer, undisturbed, until caramel is golden brown, 8 minutes. Remove from heat and carefully stir in cream (mixture will sputter). Transfer to a small bowl and let cool 5 minutes.
  • With a paring knife, make a small slit in top of each apple. Insert an ice-pop stick 1 inch deep into each slit. Dip apples into caramel, swirling to coat. Sprinkle with nuts (if using) and transfer to sheet.

Caramelized Baked Apples image

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core to a half-inch of the bottoms of each apple. With a vegetable peeler, peel the tops and bottoms of each apple, leaving a band of skin approximately two inches wide. Place the apples one to two inches apart in a large baking dish. Sprinkle a little of the zest into the well of each apple. Add the cider to the dish and bake for 25 to 30 minutes or until tender but not mushy. Place the apples on a lightly oiled baking pan and allow to cool thoroughly.
  • When the apples have cooled, place one cup of sugar and a half cup cold water in a medium-size heavy saucepan over medium-high heat. Stir with a wooden spoon until the sugar has dissolved. When the sugar begins to turn golden, rotate the pan to even the color. When the caramel is light amber, using a wooden spoon, carefully coat each apple with the hot caramel. (Caramel burns quickly and must be watched carefully. It will continue to cook and become a darker amber as you are working with it.) Repeat the method with the remaining sugar, using a clean, cool, medium-size heavy saucepan.
  • Meanwhile, whip the cream into soft peaks and fold in the ginger and refrigerate until ready to serve the apples.
  • When ready to serve, pry the apples from the baking pans with a metal spatula and arrange them on a serving platter or serve on individual dessert plates, accompanied with the ginger cream.

Bring to a boil and heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
