- Meanwhile, in a medium saucepan, heat 1 tablespoon (15 ml) of the schmaltz or olive oil over medium heat and add the sliced onions. Turn the heat down to medium-low and sauté until deeply brown and very soft, about 45 minutes.
- Peel and slice the potatoes into 1-inch (2.5-cm) slices and place in a medium pot and cover with water and a pinch of salt. Bring to a boil and cook until soft, about 20 minutes.
