CARAMELIZED ONION PIZZAS
I make these a lot. I don't like meat on pizza, and I'm not really fond of tomato sauces either, so this is my favorite pizza. The sweetness of the onions is great with the mozzarella and the pesto.

Steps:
- Cut onion into thin slices.
- Cook onions in the butter on medium low heat for about 15 minutes.
- Add the sugar and cook for about 5 more minutes.
- Spread each shell with a little olive oil, especially the edges.
- Spread pesto sauce on each pizza shell.
- Top with onions.
- Top with cheese.
- Bake for about 9 minutes, or until the cheese melts and the pizza is warmed through.
CARAMELIZED ONION PIZZA
Quick and easy little pizzas for lunch or a light dinner. I love caramelized onions, so this is one of my favorite pizzas to make at home.

Steps:
- In a medium saucepan cook the onions and garlic in hot olive oil over medium heat.
- Cook, covered for 10-15 min or until the onion is very tender, stirring occasionally.
- Set the onions aside.
- Heat grill to medium heat.
- Toast one side of each bread round directly over the heat for 1-2 minute.
- Remove from the grill.
- Top the toasted side of each bread round with the onion mixture, sliced tomatoes, mozzarella cheese, and Romano cheese.
- Return bread rounds to the grill, over indirect heat.
- Cover the girll and cook for 5-10 min or until the cheese is melted and toppings are heated through.
- Remove from the grill and top with basil before serving.

CARAMELIZED ONION, GORGONZOLA, AND ROSEMARY PIZZA

- In a large saute pan over high heat, warm the oil. Add the onions and rosemary, and cook until soft and translucent, about 5 minutes. Add butter and lower heat and continue to caramelize for about 15 minutes. Season with salt and pepper and set aside.
- Spread the pizza dough with the onion mixture and scatter Gorgonzola over top. Bake in a pizza oven or a preheated 400 degree oven until lightly golden and the crust is browned, about 20 minutes. Cut into wedges and serve.
- Pour the water onto a medium--sized mixing bowl and add the yeast, stirring with a fork until dissolved. The water should turn a light beige color. Add 1 cup of flour and the salt. Mix thoroughly with a wooden spoon. Add the second cup of flour and repeat. The dough should start coming away from the sides of the bowl, forming a soft, sticky mass. Take the last cup of flour and sprinkle over a clean, dry work surface and flour your hands well.Take the dough from the bowl and begin to work in the additional flour a little at a time. Use the heel of your hand to knead the dough and push across the work surface, clenching the dough with your fist and twisting it over. Use a dough scraper to help gather any wet dough that sticks to the surface while you are kneading. Also only add as much flour as it takes to keep the dough from sticking to your hands. When the dough no longer feels sticky, push the heel of your hand down into it and hold it there for 10 seconds. If the dough comes up clean, it's ready. If it sticks you will have to knead it a bit more.
- Lightly oil a 2 quart bowl with vegetable oil, and roll the ball of dough around the bowl to coat it with a thin film of oil, then tightly seal the bowl with plastic wrap. Keep in a warm place, and let the dough rise for 30 to 45 minutes. When dough doubles in size, remove from bowl and punch it down with your fist to deflate, then knead it again for about a minute. Dough is now ready to stretch into a round, or press into a pizza pan.
- Note: If you have a food processor with a dough hook attachment, you can make the dough much faster. Start by adding the yeast and water first and mixing well. Then add all the flour and salt and mix into a ball. Then rise the dough.
PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
KALE PIZZA WITH CARAMELIZED ONIONS
This is an amazing vegetarian pizza dish with lots of flavor from caramelized onion and kale. Plus, it's more nutritious than your average meat-and-cheese pizza.

- Heat a medium-sized skillet over medium-high heat and add butter. Add onion and mix. Add brown sugar and mix. Stir onions occasionally until butter is absorbed and onions are browned, 20 to 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C).
- Meanwhile, place kale in a large skillet over medium heat. Stir every couple of minutes until kale is wilted and dark green, about 10 minutes.
- Place pizza crust on a baking sheet. Spread caramelized onions evenly over crust. Spread kale evenly over crust. Spread tomato slices over pizza. Sprinkle feta cheese on top.
- Bake in the preheated oven for 8 minutes, checking to make sure kale does not burn.

- Divide bread dough in half. Press each portion onto a 12-in. pizza pan coated with cooking spray; build up edges slightly. Prick dough several times with a fork. - In a large saute pan, melt butter over medium heat. Saute onions in butter until the onions are soft and dark brown, approximately 25 minutes. Stir in sugar, and continue cooking for 1 or 2 more minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Grease a pizza pan or cookie sheet, and press out the dough to desired thickness. Spread onions evenly over the dough, and top with crumbled Gorgonzola.
- Bake for 10 to 12 minutes, or until done.

CARAMELIZED ONION-PORTABELLO MINI PIZZAS
Single serving pizzas using refrigerated biscuits for the crusts. This is thick crust. For thinner crust use the 4 biscuit size can. (I used Pillsbury Grands low-fat Buttermilk) A RSC #16 entry.

- In small bowl, mix ricotta cheese, chopped basil, oregano, garlic powder and 1/2 cup Parmesan cheese, until thoroughly blended. Set aside.
- Peel onion and slice into rings.
- Heat 1 tbs olive oil in a nonstick skillet over medium-high heat. Add onion slices and saute for about 3 minutes, separating rings as you stir. Stir in sugar and continue sauteing until onion begins to brown, about 10 minutes. Remove from pan into small bowl. Set aside.
- Remove and discard stems from mushrooms and slice caps into 1/4 inch slices, getting about 8-10 slices from each mushroom.
- In same pan used for onions, heat 3 tbs olive oil over medium heat and add mushroom slices. Sprinkle with salt and pepper. Cook about 5 minutes, until mushrooms just begin to give off their liquid. Remove from pan to plate and set aside.
- In same pan, cook the sausages until browned on all sides and cooked through. Remove from heat and cool slightly. Cut them crosswise into 1/4 inch slices.
- Preheat oven to 375°F Lightly coat a large cookie sheet with nonstick cooking spray ( or use 2 small cookie sheets).
- Open biscuits according to instructions on can. Take out 2 biscuits and with one stacked on the other, roll out on lightly floured surface with rolling pin, until 6-8 inches in diameter. Set on cookie sheet. Repeat with remaining biscuits until you have four rounds.
- Divide ricotta mixture among the 4 rounds, spreading it out to cover to within 1/2 inch of edge. Use your fingers for this.
- Divide mushroom slices among the rounds, then the sausage slices, then the onions.
- Sprinkle 2 tbs. Parmesan on each round. Bake for 15-20 minutes, until crusts are done, and toppings are hot. If using 2 cookie sheets, place one on upper rack and 1 on lower rack, and switch them halfway through cooking time. (If making the thinner crust, bake 10-15 minutes).
- Remove from oven and cut each round in half and serve.
