Add confectioners' sugar and 1/2 teaspoon vanilla; beat until stiff peaks form., In a large saucepan over medium heat, whisk cocoa and half-and-half cream until smooth. Heat until bubbles form around sides of pan. Whisk in coffee, caramel syrup and remaining vanilla. Top servings with whipped cream; drizzle with butterscotch topping., To prepare in a slow cooker: Prepare whipped cream as directed. Whisk together cocoa, half-and-half, coffee, caramel syrup and remaining vanilla in a 3-qt. slow cooker. Cook, covered, 2-3 hours or until heated through. Serve as directed.

- Preheat oven to 350°. Arrange crackers in a single layer in a greased 15x10x1-in. baking pan. In a large saucepan, melt butter over medium heat. Stir in brown sugar. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat and stir in pecans. Pour over crackers; spread to cover crackers., Bake 8-10 minutes or until bubbly. Cool completely on a wire rack., Crush cracker mixture into coarse crumbs; sprinkle half into an ungreased 13x9-in. dish. Spread with dulce de leche ice cream. Cover and freeze for 1 hour or until firm., Drizzle with ice cream topping and sprinkle with remaining crumb mixture. Cover and freeze 30 minutes or until ice cream topping is set., Spread with coffee ice cream; freeze. In a small bowl, beat cream until stiff peaks form. Fold in coffee liqueur. SALTED CARAMEL MOCHA
My son introduced me to this wonderful treat and the search was on! I had to find a way to make my own as I can't rationalize driving 35 miles one way to my fix. This delicious drink can now be had any time of the day or night! I hope you enjoy this as much as I do. *Prep & cook times are estimated. The first few times it took me longer, each time does get easier.

- With an espresso maker:.
- Prepare espresso. Place caramel sauce, cocoa powder and sea salt in a mug and pour espresso over them. Froth milk and slowly pour into mug, stirring to combine everything. Taste and add more caramel, cocoa and/or salt to taste. Top with whipped cream, drizzle caramel sauce, and a tiny pinch of sea salt.
- Without an espresso maker:.
- Prepare coffee. Place caramel sauce, cocoa powder and sea salt in a mug. Pour coffee into mug, stirring to combine everything. Heat milk in microwave or on the stove and add to mug, stirring everything to combine. Taste and add more caramel, cocoa and/or salt to taste. Top with whipped cream, caramel sauce and a tiny pinch of sea salt.
- Salted Caramel Syrup:.
- Makes enough for around 3-4 salted caramel mocha or hot chocolate beverages.
- 1/2 cup sugar.
- 3 tablespoons salted butter, cubed.
- 1/4 cup heavy cream, at room temperature.
- In a medium saucepan, cook the sugar over medium heat, stirring occasionally with a spatula (if it becomes lumpy, reduce heat and refrain from stirring). When it turns a deep amber color, add the butter and stir until it is melted. Add the heavy cream and whisk until the caramel is smooth (be careful, it will bubble up when you add the cream). Remove from heat and let cool. Refrigerate extra syrup.
MOCHA-CARAMEL FUDGE

- Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly coat the foil with cooking spray. Combine the condensed milk, semisweet and milk chocolate chips, butter, espresso powder and salt in a medium saucepan. Place over medium heat and cook, stirring and scraping the bottom of the pan frequently with a rubber spatula, until the chocolate is completely melted, about 5 minutes.
- Combine the dulce de leche and white chocolate chips in a small microwave-safe bowl. Microwave in 15-second intervals, stirring, until melted, about 30 seconds.
- Spread the semisweet chocolate mixture in the prepared baking dish. Immediately drizzle the dulce de leche mixture on top. Drag a butter knife through the dulce de leche mixture to make a marbled pattern on top. Let cool completely at room temperature, about 1 hour. Cover with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
- Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife.
SALTED CARAMEL MOCHA CUPCAKE
Steps:
- For the cake batter: Preheat the oven to 350 degrees F. Line a standard muffin pan or cupcake pan with 12 cupcake liners.
- Mix the coffee extract into the brewed coffee. Set aside and allow to cool slightly.
- In a bowl of a stand mixer, sift together the flour, granulated sugar, brown sugar, cocoa, baking powder, baking soda and salt and mix to combine. Add the butter, vanilla and eggs and beat on medium speed until combined. Add half of the coffee and beat for 20 seconds. Scrape the sides of the bowl and add the remaining coffee. Beat for another 20 seconds until the batter is smooth.
- Divide the batter among the cupcake liners, filling them three-quarter full. Bake until a tester inserted into the centers comes out clean, about 18 minutes. Set the pan on a rack to cool.
- For the ganache: In a medium saucepan, bring the cream, corn syrup and granulated sugar to a boil over medium-low heat, whisking until the sugar is dissolved. Remove the pan from the heat and add the chocolate, whisking until the chocolate is melted. Add the coffee extract and whisk until smooth. Add the butter and whisk until smooth. Transfer the ganache to a bowl to cool.
- For the salted caramel coffee frosting: If using the espresso powder, mix the espresso powder and the vanilla together in a small bowl until dissolved and set aside.
- Using a stand mixer with a whisk attachment, whip the butter on medium-high speed until creamy. Add the caramel and beat until combined. Reduce the speed to low, add half of the confectioners' sugar and mix until incorporated. Add the rest of the confectioners' sugar and mix until combined. Add the coffee extract and vanilla (or the espresso powder and vanilla mixture) and continue to mix at medium-high speed until completely incorporated, scraping the sides as necessary. Whip the frosting until fluffy. If necessary, use 1 to 2 tablespoons milk to loosen the frosting.
- To assemble: Cut a small and shallow hole in each cupcake and fill with the ganache. Frost the cupcakes with the salted caramel coffee frosting and sprinkle with a few granules of fleur de sel.
CHOCOLATE CARAMEL MOCHA CHEESECAKE
Wow, most decadent dessert. Well worth the time it takes to make. Your guests will be so impressed with this excellant homemade cheesecake. I loaned the cookbook that this recipe comes from to a co-worker and never got the book back, I think it was called Extraordinary Cheesecakes.

- Chocolate Cookie Crust In a small bowl stir together crushed cookies and melted butter or margarine till well combined.
- Press mixture evenly onto the bottom of a greased 9" springform pan.
- Caramel Mocha Filling In a large bowl combine cream cheese, brown sugar and cornstarch.
- Beat with an electric mixer till smooth.
- Add eggs and egg yolk, one at a time, beating well after each addition.
- Now stir in sour cream and vanilla to the cream cheese mixture and set aside.
- Stir together instant coffee and hot water, set aside.
- Place 3/4 cup of the cream cheese mixture in a small bowl; add dissolved coffee.
- Stir in sugar.
- Stir melted chocolate chips and corn syrup into remaining cheese mixture.
- Pour half of the chocolate mixture over the crust.
- Spoon 1/2 cup of the coffee mixture over the chocolate mixture.
- Pour the remaining chocolate mixture over the coffee mixture.
- Spoon on the remaining coffee mixture, without distrubing the crust, swirl the blade of a knife thru the filling to create a marbling effect.
- Bake at 350 degrees for 15 minute.
- Lower the temperature to 225 degrees and bake for 1 hour and 15 minute.
- ,or until the center no longer looks wet or shiny.
- Remove the cake from the oven and run a knife around the inside edge of the pan, to loosen.
- Turn the oven off and return the cake to the oven for an additional 30 minute.
- Chill, uncovered, overnight in fridge.
- Mocha Sour Cream Topping In small bowl stir together hot water and coffee crystals.
- Stir in brown sugar.
- Add melted chocolate chips and sour cream.
- Stir until well combined.
- Spread the warm sour cream mixture over the cheese cake.
- Leave cake in springform pan until ready to serve.
- Chill till serving.
