Easy and flavorful! Excellent side dish for spicy dishes like jerk chicken or Puerco Pibil! Serve with mango salsa for a delicious combination.

Steps:

  • Sauté the onions and garlic in olive oil until barely soft.
  • Add the spices and sauté until very soft.
  • Stir in the beans and orange juice and sauté for about 15 minutes, stirring occasionally to prevent burning.
  • Mash a few of the beans with a fork or the back of a spoon. Add salt and pepper to taste.
  • Adjust the consistency to your liking by adding orange juice or mashing more beans. You can also blend the beans with additional orange juice to make an excellent bean dip!

1 1/2 medium sweet onions, chopped
3 garlic cloves, chopped fine
2 tablespoons olive oil
1 tablespoon fresh grated gingerroot
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
4 1/2 cups drained cooked black beans or 3 (16 ounce) cans black beans
3/4 cup orange juice
salt & freshly ground black pepper

Jamaican Baked Beans image

Steps:

  • Soak the dry beans in the first measure of water overnight.
  • Stud the onion with the whole cloves.
  • Soak the salt pork in water to cover for 2 hours.
  • Drain the beans. Place them in a large kettle. Add water to reach 2" above the beans. Add the salt. Bring to a boil.
  • Lower the heat. Simmer until the beans are barely tender (30-40 minutes). Drain well.
  • Preheat the oven to 250x.
  • Place the clove-studded onion in the center of an earthenware casserole. Cover with half the beans (form a layer). Add half the salt pork (in a layer). Add the remaining beans (in a layer). Top with the remaining salt pork (in a layer).
  • Combine the sugar, rum, mustard, pepper and thyme. Add to the beans.
  • Add boiling water to barely cover. Cover the casserole tightly.
  • Bake until tender (4-5 hours), adding boiling water as needed to keep the beans moist. Uncover.
  • Cook 30 minutes longer - do not add any more water. Serve hot.

I clipped this recipe from the Wednesday, May 26th, 2004 edition of the Arizona Republic. This recipe is great because it uses black beans and is a fancy twist on traditional baked beans. Some may even call it "fusion cuisine". This dish can be mixed up, covered, and refrigerated up to 2 days before baking. I think this would be very good with seafood or chicken. This recipe is 3 points per serving. Ya Mon!

  • Combine all ingredients in a 2 quart shallow casserole dish.
  • Bake at 375 degrees, uncovered until dish is heated through.
  • (About 25 minutes).

  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain pineapple reserving 1/3 cup juice.
  • Combine ketchup, reserved pineapple juice, brown sugar, and ground mustard in a large casserole dish. Stir baked beans, sausage, and crushed pineapple into the ketchup mixture.
