Caramelized Onion Sweet Potato Salad image

Steps:

  • Heat oil in a heavy skillet over medium heat. Cook onions slowly until golden brown. Add mustard and vinegar and cook another 2 minutes. Remove from heat and add honey, orange zest and thyme, stir to combine. Let cool.
  • Preheat grill, Brush the potato slices on both sides with the vegetable oil and season with salt and pepper. Grill the potatoes on each side for 3 to 4 minutes or until just cooked through. Place potatoes in a bowl and fold in onion mixture.

2 tablespoons olive oil
3 red onions, peeled, halved and thinly sliced
1 tablespoon Dijon mustard
1/4 cup balsamic vinegar
1 teaspoon honey
1 tablespoon finely chopped orange zest
1 tablespoon finely chopped fresh thyme
3 sweet potatoes, sliced into 1/2-thick slices
Vegetable oil
Salt and freshly ground pepper

  • In a large skillet, heat oil over medium-high heat; saute onions until softened, 2-4 minutes. Reduce heat to medium-low; cook until deep golden brown, 20-30 minutes, stirring occasionally., Meanwhile, place potatoes, salt and water to cover in a 6-qt. stockpot; bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes. Drain; place in a large bowl. Add caramelized onions. Cool slightly., Mix dressing ingredients; stir gently into potato mixture. Refrigerate, covered, until cold, about 8 hours.

Carmelized Onion and Pepper Potato Salad image

Steps:

  • 1. Boil unpeeled potatoes and whole garlic cloves until potatoes are tender.
  • 2. Drain and run cold water over potatoes and garlic to cool. Drain potatoes and set garlic aside.
  • 3. Peel and chop potatoes into half-inch chunks. Season with salt, pepper, and seasoned garlic powder.
  • 4. Spray non-stick pan and add a tablespoon of oil. Saute onions and peppers on low with a tablespoon of water, cover. Check and stir every few minutes. When softened, turn to high and caramelize (brown) the onions and peppers. Turn heat down to medium if needed.
  • 5. Add softened cooked garlic cloves by squeezing over onions and peppers. Smash and mix in.
  • 6. Turn off heat and add sour cream and mayo to onions and peppers.
  • 7. Mix all together and add to potatoes.
  • 8. Turn into a large bowl and cover with a lid or plastic wrap and refrigerate for 2 or more hours. Tastes good warm too.

Potatoes and Caramelized Onion Casserole image

Steps:

  • Set oven to 350 degrees.
  • Butter an 8-cup baking dish (or larger).
  • In a large skillet melt the butter with oil over medium heat add in sliced onions; saute stirring often until a rich golden brown (about 18-20 minutes).
  • Add in the garlic the last 5 minutes of cooking.
  • Add in the sherry and tarragon; cook until the liquid is absorbed season with salt and pepper, remove from heat and set aside.
  • Arrange a layer of sliced potatoes in the bottom of the baking dish, season with salt and pepper.
  • Top with 1/3 of the caramalized onion mixture.
  • Arrange another layer of potatoes over the onions, season with salt and pepper.
  • Repeat the layers until all of the potatoes and onions are used up (finishing the top with potatoes).
  • Bring the chicken stock to a simmer and pour slowly over the potatoes.
  • Cover the mixture directly but lightly with parchment paper, then cover the dish with foil.
  • Bake for about 40 minutes.
  • Uncover the dish and bake about 20 minutes more or until the potatoes are tender.
  • Cool for 10 minutes before serving.
