Steps:
- Combine the lentils with 3 cups water in a saucepan, and bring to a boil. Reduce the heat, cover and simmer for 15 minutes. Set a strainer over a bowl, and drain.
- Heat the oil over medium heat in a heavy casserole or skillet. Add the onion and coriander seeds. Cook, stirring, until the onion is tender, about five minutes. Add the garlic and carrots and salt to taste. Cook, stirring, for two to three minutes until the carrots begin to soften. Stir in the dissolved tomato paste, sugar and lentils. Add 1 to 1 1/2 cups of the cooking water from the lentils (enough to cover the lentils), salt to taste and half the mint. Bring to a simmer, and simmer uncovered for 15 to 20 minutes until the lentils are tender and much of the liquid has evaporated. Taste and adjust salt. Remove from the heat, sprinkle on the remaining mint and serve, or allow to cool and serve at room temperature with cooked whole grains, like bulgur or quinoa.

CARROT/LENTIL SALAD
I got this recipe in a "swap" with one of my sisters. People usually aren't too familiar with lentils, so they'll at first try only a little. Before long, though, they'll ask to have the bowl passed back down so they can take a "real" helping! We live on a small livestock farm-raising goats, rabbits and chickens-and I've found this salad's an ideal dish to take out to the field. My husband and I have four children, ranging in age from 6 years to 6 months.

BABY FOOD LENTILS AND CARROTS-BEABA
I recently purchased a Beaba Babyfood maker. I have already made homemade babyfood and it really was as easy as it claims to be. I found a similar recipe to this one and I just adjusted it to be made with this really cool machine. The machine can be pricey but I really feel it is worth it. My baby boy just loved this dinner and it was healthy and homemade.

Steps:
- Put the lentils into a bowl and cover with water. Soak for 1 hour.
- Grate and chop the carrot into 1 inch pieces. Measure water to Level 3 on the Beaba bowl. Pour the water into the resevour. But lentils and carrots into the Beaba bowl. Start the machine. When it's finished cooking follow the instructions for mixing and mix the lentils, carrots, and pinch of garlic powder. Add reserved water and any extra you may need until you obtain the right consistency for your baby. My baby is now 6mo and I make this to the consistency of yogurt. I then mix it with baby rice cereal.

From cbc.ca
- Place a large heavy-bottomed pot over high heat and add the boiling water, lentils, tomatoes, garlic cloves, salt, chili powder, and turmeric powder. As soon as the contents of the pot come to a boil, decrease the heat to medium-low. Simmer, partially covered, until the lentils are tender, about 30-35 minutes, stirring halfway through to ensure the lentils are not catching at the bottom of the pot.
- While the lentils simmer, preheat the oven to 425F degrees, placing the rack in the lower third of the oven. Toss the carrots with 2 tablespoons of oil and arrange them in a single layer on a baking sheet, and roast until they appear brown along the edges, about 25 minutes, tossing halfway through. Allow carrots to cool, then turn them out on a board and dice them into ½-inch cubes.
- When the lentils are ready, they will appear creamy; you can also test a few between your index finger and thumb, they should give easily. Turn the heat off, and smoosh the garlic cloves in the pot with the back of a ladle; they will blend right in. While lentils are still warm, add the carrots and kale, and gently stir; the kale will soften up and wilt.
