QUICK AND EASY CHEESECAKE PIE
This recipe was handwritten on the inside cover of a recipe book given to me as a wedding gift in 1968. It's a pie that makes it's own crust. It can be covered with your favorite fruit pie filling or served with your favorite fruit topping. It's an easy recipe for any new cook and a long standing favorite of mine.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish.
- Combine cream cheese, milk, sugar, eggs, vanilla extract, and cornstarch in a blender; blend until smooth. Pour batter into the prepared baking dish.
- Bake in the preheated oven until edges are puffed and surface of cheesecake pie is firm except for a small spot in the center that will jiggle when the pan is gently shaken, 60 to 65 minutes. Remove from the oven and sprinkle with cinnamon. Run the tip of a table knife around the edges of the pan, set the pan on a wire rack, and allow the cheesecake to cool at room temperature, about 1 hour.
- Top cooled cheesecake with strawberries. Cover and refrigerate until chilled, about 4 hours.

MOM'S CHEESE PIE
"My mother brought this Old World recipe with her from the Ukraine," says Anne Kulick of Phillipsburg, New Jersey. A sprinkling of cinnamon enhances the pie's subtly sweet flavor.

- Separate one egg. In a small bowl, lightly beat egg white; set aside. In another small bowl, combine egg and egg yolk; set aside., On a lightly floured surface, unroll pastry; cut in half. Roll out one half of pastry into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge. Brush with egg white; sprinkle with 1/2 teaspoon cinnamon., In a large bowl, combine the cheeses, confectioners' sugar, cornstarch, vanilla, salt and egg mixture. Pour into prepared pastry., Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush remaining egg white over pastry; sprinkle with remaining cinnamon., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool completely on wire rack. Refrigerate leftovers.

COPYCAT CELEBRATION CHEESECAKE

- Preheat oven to 350°. In each of 3 small bowls, whisk 1-1/3 cups milk and 1 package pudding mix for 2 minutes. Refrigerate, covered, while baking cake layers., Line bottoms of 2 greased 9-in. round baking pans with parchment; grease paper. Prepare cake mix batter according to package directions, folding 2/3 cup sprinkles into batter. Transfer to prepared pans. Bake and cool as package directs., Using a long serrated knife, trim tops of cake layers to level; crumble trimmings. Transfer to a parchment-lined baking sheet. Bake at 350° until crisp but not browned, about 5 minutes. Cool completely on pan on wire rack., Line two 9-in. springform pans with plastic wrap, letting ends extend over sides. Place strawberries in a food processor; process until ground. Stir ground strawberries into 1 bowl of pudding. To another bowl of pudding, whisk in blue food coloring. To third bowl, whisk in cocoa; refrigerate chocolate pudding., Place 1 cake layer in 1 prepared springform pan; spread with strawberry pudding. Place remaining cake layer in remaining prepared springform pan; spread with blue pudding. Freeze both pans at least 1 hour. Top each with 1 carton cheesecake filling. Freeze at least 1 hour., Remove strawberry-layered pan from freezer; spread chocolate pudding over top. Return to freezer 3 hours longer. Meanwhile, stir remaining 2/3 cup sprinkles into cooled cake crumbs., Remove rims from springform pans; discard plastic wrap. Place strawberry-layered cake on a serving plate; top with blue-layered cake. Frost top and sides with cream cheese frosting. Gently press crumb mixture into frosting on sides of cake; sprinkle with sequins. Freeze until ready to serve. Remove 10 minutes before cutting.

Steps:
- 1. Using a food processor crumble the cookies 1/2 pkg at a time until fine. Toss into a bowl and add melted butter 5 T. first and toss with a fork til moist adding 1 more T.if needed to form crust. Place into a 9"-10" deep dish pie pan and form a crust using the back of a larger spoon, up sides and on the bottom and press to firm ,freeze
- 2. Using a mixer add 4 oz. softened cream cheese, 1 c. powdered sugar, 1 T. milk, 1 tsp. vanilla and 4 oz Cool Whip. Beat well and pour over crust-spread to make layer #1. Freeze
- 3. Using the same mixer and bowl add remaining cream cheese, powdered sugar, milk,vanilla and 8 oz. Cool Whip. Beat well and divide in 1/2.
- 4. To one bowl add melted German chocolate squares and spread over layer one. Freeze
- 5. To remaining layer add peanut butter and beat well. Dallop onto of the chocolate layer and spread carefully. Cover with plastic wrap and refrigerate best overnight or at least 8 hours. Decorate with remaining Cool whip and serve

Divide into three portions. , For Pine Nut-Pesto Cheese Ball: Beat one portion of cream cheese mixture and pesto until blended. Stir in basil. Chop 2 tablespoons pine nuts; stir into cheese mixture. Shape into a ball; roll in remaining pine nuts. Wrap in plastic; chill until firm. , For Horseradish-Bacon Cheese Ball: Beat one portion of cream cheese mixture and horseradish until blended. Stir in bacon and onion. Shape into a ball. Wrap in plastic; chill until firm., For Salsa Cheese Ball: Beat one portion of cream cheese mixture, tomato paste and salt until blended. Stir in cilantro, onion and jalapeno. Shape into a ball. Wrap in plastic; chill until firm. , Can refrigerate up to two weeks. Serve with crackers.

- In a bowl, combine cracker crumbs and butter. Firmly press onto the bottom and up the sides of a 9-in. pie plate. Cover and refrigerate for 30 minutes. , In a large bowl, beat the cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in vanilla and lemon zest just until blended. Pour into prepared crust. , Bake at 325° for 20-25 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla; spread carefully over pie. Bake 5 minutes longer. Cool on a wire rack for 1 hour. Refrigerate overnight. Garnish with mint and lemon zest if desired. Refrigerate leftovers.

CELEBRATION LAYER CAKE
Steps:
- Bake a 1 1/2 batch of white cake in 2 buttered and paper-lined 10-inch pans. When cakes are cooled, peel off paper and position one layer right side up on a cardboard. Spread the layer with chocolate buttercream, then top with second layer upside down. Mask outside of cake with more buttercream, then press multicolored chocolate shavings made with milk and white chocolate against cake all around.

This was the 2003 National Pie Championship Best of Show recipe. I saw this on the Food Network and it looked wonderful. Raine Gottess provided the recipe. I sprinkled chopped cookies over the top.
