Celery is the star in this dish instead of being a supporting character! Sometimes, I use roughly crushed chow mein noodles instead of crackers and just enough butter to crisp the almonds.

Steps:
- Preheat oven to 350°F.
- Cook celery in salted boiling water for 7 minutes and drain.
- Combine with water chestnuts and soup, pour into a greased 1 1/2 quart casserole.
- In a sauté pan, melt butter, add cracker crumbs and almonds and stir until well mixed.
- Sprinkle over celery mixture and bake for 30 minutes.
CREAMY CELERY CASSEROLE
Celery, hardly heard of as a baked dish, is surprisingly tasty in this side dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a medium saucepan over medium heat, and cook celery until tender, about 5 minutes. Move celery aside, and mix in flour and salt. Pour in milk, and mix all ingredients, stirring constantly, until thickened.
- Stir mushrooms, green bell peppers and pimento peppers into mixture. Mix in cheese, and stir until melted.
- In a small bowl, blend bread crumbs and butter. Transfer the celery mixture to a medium baking dish, and sprinkle with the bread crumb mixture. Bake 20 minutes in the preheated oven, or until lightly browned.

- Preheat oven to 350°. Combine chicken, soup and sour cream; spread into a greased 13x9-in. baking dish. Combine crumbs, butter and celery seed; sprinkle over chicken mixture. , Bake, uncovered, until bubbly, 30-35 minutes. If desired, garnish with parsley and red pepper.

CELERY CASSEROLE
My aunt made this many years ago for a holiday dinner and I was hooked from the first bite! The crunch, the buttery crumbs...so very good! Simple fare - ultimate comfort food. This is great with turkey, chicken, ham, pork chops...heck anything! Hope you try and enjoy as much as we do.

Steps:
- Chop celery, put in medium pan, cover with water and bring to a boil for 10 minutes.
- While celery is cooking, crush crackers, add almonds and the melted butter. Reserve 1/3 for later use.
- Drain water chestnuts and cooked celery. Add to cracker/almond/butter mixture and add cream of chicken soup. Stir to mix well.
- Pour into 2 quart casserole (spray with non-stick cooking spray). Bake 350 degrees for 20 minutes; top with reserved crumb mixture and continue baking for another 10 minutes.

RITZ CRACKER CASSEROLE
There are several versions of the Ritz cracker casserole, here is mine, which is made with cream cheese. This is comfort food at its best.

Steps:
- In a medium-size saucepan put the cream cheese and butter, and cook over low heat, stirring frequently, until smooth.
- Remove from heat.
- Crush the Ritz crackers and place them in a bowl.
- Add just enough milk to moisten the crackers and blend.
- In a greased casserole dish layer 1/2 broccoli, 1/2 chicken, 1/2 grated cheeses, 1/2 crushed crackers and 1/2 cream cheese sauce.
- Repeat the layers.
- Bake in a 350F oven for 35-45 minutes, or until everything is hot and the cheese has melted.
- This can also be made without the chicken.

- Cook broccoli on stove, drain.
- Add soup and mayo, mix well.
- Crumble 1/4 of the crackers and mix inches.
- Crumble the remaining crackers and place on top of casserole.

RITZ CORN CASSEROLE
My ex's family makes a corn casserole as a holiday side dish that I have been trying to recreate for a few years. I obviously can't call to ask for the recipe and so this is the closest I've been able to get.

Steps:
- Crush the Ritz crackers close to a powder consistency.
- Add the melted butter to crackers and mix with hands until crumbly.
- Spread half of cracker mixture on bottom of a square casserole dish, pressing down with fingers to make a crust.
- Heat creamed corn on stove until warm throughout.
- Add eggs and stir until combined.
- Mix flour with just enough milk to make a thick paste.
- Add flour paste to corn mixture.
- Stir well and heat throughout.
- Pour into casserole dish.
- Bake 30 minutes at 400 or until firm.
- Add remaining crackers to form a top crust and bake additional 10 minutes.
