Raspberry Lime Rickey Sorbet Recipes
NO-CHURN RASPBERRY-LIME SORBET
Nothing could be easier, or more fun to watch blend together, than this two-ingredient, sorbet. Simply puree frozen raspberries and limeade in a food processor for a few minutes for a colorful and refreshing dessert.

Steps:
- Add the raspberries and limeade concentrate to a food processor and process until smooth, scraping down the sides of the bowl with a rubber spatula as needed. Transfer to an airtight container and freeze until scoopable, about 1 hour. The sorbet will keep for up to 2 months.
RASPBERRY LIME RICKEY
You can change the flavor this recipe by using any flavored syrup. For a Lemon Rickey use a lemon in place of a lime. For an Orange Rickey use an orange etc. For an alcoholic version, add a 1/2 ounce of vodka.

- Fill a tall glass with ice. Squeeze each of the lime wedges into glass, and drop in. Fill glass nearly to the top with carbonated water, and top with raspberry syrup.

RASPBERRY LIME RICKEY
Steps:
- In a sieve set over a bowl drain raspberries, pressing gently on berries with back of a spoon if necessary to yield 1/2 cup liquid, and reserve raspberries for another use. In a 2-quart pitcher stir together raspberry liquid, lime juice, water, vodka, Pernod, and sugar until sugar is dissolved and chill until cold. Rickeys may be prepared up to this point 1 day ahead and chilled, covered.
- Just before serving, add club soda or seltzer water, enough ice to fill pitcher, and some fresh raspberries and lime slices. Serve rickeys in glasses filled with ice and garnish with more fresh raspberries and lime slices.

- Place a fine mesh strainer over a large bowl. Add pureed raspberries to the strainer (1/4 at a time) and press with the back of a large spoon or a rubber spatula through the strainer to remove the seeds. Repeat with remaining raspberry puree. Discard anything left in the strainer.
- Add sugar, vanilla, and lime juice to the raspberry juice in the bowl. Whisk until sugar is dissolved.
- Freeze according to your ice cream maker's instructions. Serve immediately for a soft-serve dessert OR transfer to a shallow container and freeze an additional 1-2 hours for a more firm sorbet.
