CEREAL TARTS WITH YOGURT AND FRESH FRUIT
Crushed cereal, almonds and maple syrup are pressed into individual tart pans and baked. then filled with yogurt and fresh fruit to make an elegant breakfast or brunch, even dessert! Adapted from Country Living magazine.

Steps:
- To make the tart shells:
- Preheat oven to 350°F Place eight 4" round tart pans with removable bottoms on a baking sheet and set aside. Place the cornflakes and pecans in a food processor and process until combined, about 10 quick pulses. Transfer the cereal mixture to a large bowl, drizzle with the melted butter, and toss to combine. Stir in maple syrup. Evenly divide the cereal mixture among the tart pans and press along the bottoms and sides to form shells. Bake for 10 minutes. Transfer to a wire rack to cool.
- To assemble the tarts:
- Remove the shells from the molds and transfer each to a serving plate. Mix yogurts together and top each tart shell with 1/4 cup of yogurt and 1/3 cup fruit. Serve immediately.

Steps:
- Spray 24 mini muffin cups with cooking spray. In large saucepan, heat marshmallows, butter and cinnamon over medium-low heat about 2 minutes, stirring constantly, until marshmallows are melted. Remove from heat. Add cereal; stir until well coated.
- Spoon about 1 tablespoon cereal mixture into each muffin cup; press in bottoms and up sides of cups. Let stand until set.
- Just before serving, remove tarts from muffin cups. Top each with a small spoonful of yogurt and 1 berry.

- Spray the bottom of a 9-inch tart or cake pan or a pie dish with nonstick spray and line the pan with parchment paper on top. Set aside. (The spray helps the parchment stick to the pan, making spreading the crust easier. The parchment prevents the crust from sticking to the pan. If you don’t mind the taste of nonstick spray on the crust, you don’t have to use parchment. Just spray the pan with the nonstick spray and add the crust.)
- Make sure your dates are soft by soaking in warm water for 10 minutes. Make sure you drain them and chop in half before using.
- Pulse the dates and cashews together until thick “dough” is formed and the cashews are all broken up, as pictured above. The dough will be moist from the oil in the nuts. Press evenly into prepared tart pan and partly up the sides.

- Add cereal to blender or food processor. Grind for a few seconds, until a fine powder, is formed, similar to cornmeal. You may have to work in two batches to fit the 5 cups of cereal.
- In a blender or food processor add yogurt, blueberries, vanilla and maple syrup. Puree until a smooth purple-colored mixture is achieved.
- Add desired fruit to the top of the tart and sprinkle with almonds, freeze for 5 minutes or refrigerate until ready to serve. Carefully remove the outside tart pan ring right before serving.
