CHAMBORD PANNA COTTA

Panna Cotta is one of the loveliest desserts around. Pair it with Chambord, one of the yummiest liqueurs around & you have heaven. "cooking time" is refrigeration time.

Chambord Panna Cotta image

Steps:

  • Lightly coat 8 6oz ramekins with butter & set on a small baking sheet.
  • Combine milk, cream, sugar, dissolved gelatin & Chambord in a saucepan and bring to a quick boil. Let cool to room temperature.
  • Divide the mixture evenly among the prepared ramekins.
  • Cover with plastic wrap & refrigerate until well chilled & firm, at least 6 hours.
  • Up to 2 hours before serving, remove the ramekins from the refrigerator. Run a small kitchen towel under very hot water.
  • Wring out excess water. Fold the hot towel in half & lay it on the counter. Place the ramekins on the towel to help release the bottoms.
  • Carefully run a thin knife around the inside of each ramekin to losen the custard. Invert & unmold each custard onto a small, flat serving plate. Refrigerate until ready to serve.
  • To serve, drizzle panna cotta with Chambord.

Steps:

  • Place 3/4 cup of cream in a bowl.
  • Sprinkle over powdered gelatine, stir to combine.
  • Set aside for 5 minutes till absorbed.
  • Heat remaining cream, buttermilk, icing sugar and vanilla over medium heat.
  • Stir till sugar dissolves then add gelatine cream.
  • Stir till dissolved, strain and pour into lightly greased 7 cup mould or Bundt tin.
  • Refrigerate till set.
  • Dip mould into boiling water for 30 seconds before turning out onto a plate to serve.

Steps:

  • In a medium saucepan sprinkle the contents of the gelatin packet over the half and half and let stand for 5 minutes.
  • Over low heat stir the gelatin mixture until it totally dissolves.
  • Add the heavy cream.
  • Add half of the vanilla and sugar.
  • Stir again over the low heat until the sugar is dissolved.
  • Taste and add remaining vanilla if you wish.
  • Wipe the insides of 4-1/2 cup ramekins with a light coating of canola oil.
  • Ladle in the cream mixture and let stand until cool.
  • Place in the fridge for 4 hours.
  • You can serve in the dishes or invert.
  • Serve with fresh fruit.
