CREAM PUFFS

An easy and impressive way to make a great dessert. Whip them up and watch them disappear!

Cream Puffs image

Steps:

  • Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
  • Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.
  • When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.

Steps:

  • 30 minutes prior to event starting, remove box from freezer. (Unless box directions say earlier than 30 minutes, mine said 30) Remove cream puffs and arrange on serving platters. Allow to thaw for 30 minutes. Just prior to serving, using a piping bag, pipe a dollop of chocolate mousse onto each cream puff. Serve immediately

Steps:

  • Place all ingredients in a large bowl. Use an electric mixer to beat until very stiff peaks form and the filling smooths out, about 2 minutes. Store covered in the refrigerator until well chilled. The pastry cream can be refrigerated up to 3 days.

One 8 oz. package (226g) full-fat cream cheese, cold
¾ cup (180ml) heavy cream
½ cup (60g) confectioners' sugar
1 tsp. vanilla extract

CHEATER NO-COOK PASTRY CREAM

  • Blend heavy cream, pudding mix, sour cream, and salt in a medium bowl using a whisk or a hand mixer set on medium speed until well-blended and smooth. Refrigerate for 5 to 10 minutes.

  • In a large saucepan or Dutch oven, bring water and butter to a rolling boil. Stir in the flour and salt until the mixture forms a ball.
  • Transfer the dough to a stand mixer, and mix for a minute or two, until the dough is lukewarm and most of the steam has escaped. Beat in the eggs, one at a time, mixing well after each addition.
  • Spoon or pipe tablespoons of dough onto parchment lined baking sheets. Bake for 20-25 minutes, or until puffs are golden brown. Turn off the oven. When puffs are cool enough to handle, poke a hole in the bottom of each cream puff with a toothpick. Return the cream puffs to the oven, leaving the door slightly ajar, for another 20-30 minutes to dry the centers out completely.

  • Preheat oven to 400 degrees. Generously butter a 9 inch pie dish, set aside. In a medium saucepan over medium-high heat, bring water, butter and salt to a boil. Once mixture reaches a boil, reduce heat to low and stir in flour. Cook, stirring constantly, until mixture comes together forming a ball and pulls away from the sides of the pan.
  • In a large mixing bowl, whisk together 1 cup heavy cream, milk and pudding mix, for about 3 minutes until mixture has thickened. Spread pastry cream into an even layer over cooled puff pastry pie shell (note that it's pretty much inevitable that you're going to have some bubbles in the pie shell, you can try and flatten them a bit before spreading in the filling).
  • In a large mixing bowl, using an electric hand mixer, whip 3/4 cup heavy cream until soft peaks form. Add in granulated sugar and whip until stiff peaks form. Spread sweetened whipped cream evenly over pastry cream layer.
