CANADIAN SHARP CHEDDAR CHEESE SPREAD
Attention, cheese lovers! This may be the best cheese spread you've ever had! My friend's mother gave me this recipe over 15 years ago. I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

- Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
- Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
- Remove cheese spread from refrigerator about 30 minutes before serving.

- All the ingredients should be at room temperature before starting this recipe.
- Whip slowly, in a medium mixing bowl, with the mixer until the mixture is fluffy. I also have mixed it well by hand, but room-temp ingredients are KEY to do that.
- Spread on bread slices. (Rye, Sourdough or regular French Bread are great.) Toast under the broiler until hot.

- Combine cream cheese, miracle whip, shredded cheese and scallion.
- Add half the amount of bacon (crumbled).
- Spoon into a glass pie dish.
- Crumble the remaining bacon and one sleeve of ritz crackers.

- Bake at 400F for 20 minutes.
- Serve warm with the remaining ritz crackers.

CHEDDAR SPREAD
From Vegetarian Times, September 2002. This is great served on crackers, wheat or rye bread, pitas, and bagels. It is also good for making a veggie wrap by spreading it on a tortilla, topping with chopped tomatoes, shredded lettuce and sprouts, and rolling it all up. IPA AND CHEDDAR SPREAD

- Cook the bacon in a large skillet set over medium heat until crispy. Transfer to a paper-towel-lined plate. Allow to cool slightly, then crumble and divide in half.
- While the bacon is cooking, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until fragrant, 5 to 7 minutes.
- In a medium bowl, stir together the Cheddar, beer, parsley, lime juice, Worcestershire, cumin, cayenne, half of the jalapenos, the cream cheese, garlic cloves and half of the crumbled bacon until well combined. Season with salt.
- On a large plate, stir the toasted pecans, remaining jalapenos and bacon together until evenly distributed. Wet hands slightly to prevent the cheese from sticking. Shape the cream cheese mixture into a ball.
- Roll the ball in the pecan mixture until coated on all sides. Cover the ball and refrigerate for at least an hour before serving.

GRILLED CELERY WITH PECANS AND CHEDDAR SPREAD
Ants on a log were my favorite snack when I was a kid. This is my savory grown-up version. I pipe a spicy cheddar spread down celery, then press in toasted pecans. It's a great creamy-crunchy appetizer that feels indulgent but won't leave your guests too full for dinner. It's tasty with raw celery too.

- Heat a grill or grill pan over high heat.
- Mix the cream cheese, mayonnaise, garlic, and cayenne in a medium bowl until smooth. Fold in the cheddar cheese until evenly distributed. Transfer to a large resealable plastic freezer bag and massage to soften the cheese.
- Rub the oil all over the celery stalks. Place on the hot grill grate or pan, curved side down, and grill until grill marks appear, about 8 minutes. Transfer to a cutting board. When cooled, cut into 4-inch lengths at an angle.
- Snip a hole in the corner of the bag with the cheddar spread. Pipe the spread into the cavity of each celery stalk. Press the pecans into the spread. Serve immediately.
