CHEESE & HERB POTATO FANS

Cheese & Herb Potato Fans image

Steps:

  • Preheat oven to 425°. With a sharp knife, cut each potato crosswise into 1/8-in. slices, leaving slices attached at the bottom; fan potatoes slightly and place in a greased 13x9-in. baking dish. In a small bowl, mix butter, salt and pepper; drizzle over potatoes., Bake, uncovered, 50-55 minutes or until potatoes are tender. In a small bowl, toss cheeses with herbs; sprinkle over potatoes. Bake about 5 minutes longer or until cheese is melted.

Steps:

  • Preheat oven to 400 degrees. In a small sauce pan melt together the butter, garlic, and parsley. Peel each potato and cut each potato crosswise into 1/4" slices without slicing all the way through the potato. Place potatoes in baking dish and drizzle with butter mixture. Bake for 1 hour or until golden, crispy and the potatoes have fanned out. Serve hot.

Hedgehog Roasted Potatoes with Cheese and Herbs image

Steps:

  • 1. Preheat the oven to 400 degrees F. Using a fork, mash together the butter, Monterrey Jack, herbs, Parmesan, smoked paprika, 1 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until combined. Spoon onto a piece of nonstick aluminum foil and, using one side to press, form into a 6-inch log. Wrap the foil around the log, twist the ends closed and place in the freezer until firm, about 20 minutes.
  • 2. Using a sharp knife, cut a series of slits into each potato, with about 1/8-inch between slits and cutting about three-quarters of the way through. Unwrap the butter log and thinly slice two-thirds of it into about 24 rounds. Slip the butter slices into every 3 to 4 slits of each potato, using about 6 slices per potato. Wrap each potato tightly in nonstick aluminum foil, sealing the foil on the top side of the potato.
  • 3. Place directly on the oven rack and bake until very tender, about 1 hour. Carefully open the top of each potato package to let out the steam and expose the tops. Bake until browned and crisped, about 10 minutes more. Unwrap each potato and drizzle with any accumulated flavored butter from the foil.

Easy Cheesy Potato Fans image

Steps:

  • Heat oven to 400°F.
  • Place potatoes on microwaveable plate; prick each in several places with fork. Microwave on HIGH 8 to 10 min. or until tender, turning and rearranging every 3 min. Cool 10 min.
  • Make 7 to 9 diagonal cuts in top of each potato, cutting about 3/4 of the way into potato. Place, cut sides up, on baking sheet sprayed with cooking spray. Gently spread slices of 1 potato slightly apart; brush with 1 Tbsp. dressing. Repeat with remaining potatoes and dressing.
  • Bake 15 to 18 min. or until potatoes are lightly browned. Top with cheese; bake 1 to 2 min. or until melted. Sprinkle with onions.
