FAB SANDWICH FILLERS

These sandwich ideas are great for a school packed lunch and they're so tasty, you'll be taking them to work for your lunch, too

Fab sandwich fillers image

Steps:

  • Cheesy apple slaw Mix their favourite grated hard cheese with grated apple, chopped spring onions, a squeeze of lemon and a little mayonnaise. Delicious with wholemeal bread or rolls.
  • Salmon smash Mash up a drained and boned can of red salmon with a little tomato ketchup. Spread onto wholemeal or granary bread and sprinkle with lots of mustard and cress.
  • Tandoori chicken wraps Roll chapattis or flour tortillas around a filling of ready-cooked tandoori chicken pieces, shredded lettuce and chopped tomato. Serve with dollops of bought chunky cucumber raita.
  • Scout's MCC Try Marmite, grated cheddar and sliced cucumber in a crusty baguette or ciabatta roll - they'll either love it or hate it!
  • Cream cheese & roasted red pepper bagels Fill onion or regulars bagels with soft cheese and roasted peppers from a jar.
  • Creamy smoked mackerel Skin and flake smoked mackerel fillets,then mix with a little mayonnaise and Greek yogurt. Spread onto thick wholemeal bread and top with crisp lettuce leaves.

CHEESE AND EGG SANDWICH FILLING

Nothing fancy here but it worked to make a sandwich a little different from the usual egg sandwich to put in lunches. The original version came from a recipe leaflet that came from the local electric company about 30 years ago. It called for using process cheese and no dressing and chopping everything together in a food chopper(gotta use more electricity for the electric company!) but I prefer the cheddar, doing the prep by hand and usually use Miracle Whip to bind it together as I like it rather than mashing it all together in a food chopper.

Cheese and Egg Sandwich Filling image

Steps:

  • Blend all ingredients together in a small bowl using enough dressing or mayo to bind together as you like it. Use to fill sandwiches. Great with rolls or whole grain bread. Makes about 2 to 2 1/2 cups filling. Average about 6 sandwiches depending on bread used and how generously you fill them.

6 -8 ounces cheddar cheese, shredded or grated
4 large eggs, hard-cooked and chopped or mashed
1/2 cup chopped sweet pickle, your favourite kind
3 -4 tablespoons minced sweet onions or 3 -4 tablespoons green onions
1 -2 sprig parsley, snipped or chopped
2 dashes pepper (optional)
1/3 cup salad dressing or 1/3 cup mayonnaise, or amount as desired

SAVORY TMT SANDWICH FILLING

Tofu Miso Tahini is a delectable vegan sandwich filling. You can replace the sunflower seeds with sesame seeds if you prefer. You'll never want tuna or chicken salad again!!! Try TMT on an open-faced, toasted bagel with ripe tomato slices, on a seed-laden, whole wheat bread with lettuce and sweet onion, or on rye crackers as an hors d'oeurve, garnished with fine slices of vegetables.

Steps:

  • Press tofu to remove excess water: Place tofu on a flat surface. Cover with a cutting board, and place an iron skillet or a similarly heavy object on top. Allow it to sit for about 30 minutes.
  • Crumble tofu into a medium bowl. Mix in miso and tahini. If desired, stir in onion, carrot, and seeds. Refrigerate.
