~ EASY CHEESY STUFFED PORK LOIN ~
Always thinking of easy, yet delicious low carb ways of cooking meats, that work for my diet, yet the family can enjoy also. This pork loin was enjoyed by everyone! If you like garlicky, you'll love this dish! If not a garlic fan...leave it our or cut amount!

Steps:
- 1. Clean loin of fat and silver skin.
- 2. After cleaning loin of excess fat and silver skin, with a sharp knife...carefully slice loin down the center, but not all the way through. What you'll be doing is butterflying the loin in order to stuff. I then slice on each side of the initial slice and open. Pound with meat mallet, to thin out. You should now have a fairly large rectangle. Use another method if you choose, whatever is easiest for you!
- 3. Preheat oven to 425 degree F. Salt and pepper the inside of loin. Sprinkle with garlic, Parmesan, then bacon, evenly.
- 4. Spread spinach evenly over meat.
- 5. Sprinkle evenly with mozzarella cheese.
- 6. With maybe an extra hand, as you firmly roll the pork, stuffing anything that may fall out as you go, back in, while holding closed, use bakers twine to keep loin securely in a roll. Like I said, it's easier if you have help with this part.
- 7. Salt and pepper lightly and brown all sides in olive oil over medium heat!
- 8. Place in a baking dish, open side up. Add a little water to bottom of dish. Bake fore 45 minutes to 1 hour or until meat thermometer real aches 160 or until desired doneness is reached.
- 9. Let the meat rest for about 5 minutes, this will keep juices in, plus help set up cheese some. Remove twine before slicing! Another great low carb meat dish, which was a big hit with my family!

- For the Stuffing:.
- In a medium sized bowl take the cream cheese, the shrimp, the jalapeno peppers, the green onions, and approximately ¼ cup of BBQ Rub and mix together. Set aside.
- Take a sharp knife and hollow out a hole thru the center of the pork loin approx 1-½ inches to 2 inches in diameter. Save the portion of the loin that you cut out. Take the stuffing mix and fill the hollow hole you created in the pork loin. Take a part of the loin (approximately 1 inches thick) that you cut out of the center of the loin and replace it on the two ends of the stuffed loin. Use tooth pics to hold the pieces of loin in place. Now simply use the Simple 1-2-3 method of applying Worcestershire sauce and then the remaining ½ cup of a BBQ Rub over the entire pork loin and place on your smoker or oven. Cook at approximately 200 to 225 degrees for 2 ½ to 3 hours till you get an internal temperature of 160 degrees. After about an hour on the smoker I usually form a boat with some aluminum foil and place the loin inside the boat. You can use an aluminum pan if you wish. The reason for the foil or the aluminum pan is as the center of the loin heats up the stuffing will begin to ooze out of the ends of the loin and this makes clean up a lot easier.
- Let the loin rest for about ½ hour then slice. It is a bit gooey but it is sooooo good.
- By the way you can make just the stuffing mix and use it as a dip. It is great by itself.

- Cut a lengthwise slit down the center of the tenderloin to within 1/2 in. of bottom. Open tenderloin so it lies flat. On each half, make another, lengthwise slit down the center to within 1/2 in. of bottom; cover with plastic wrap. Flatten to 1/4-in. thickness. Remove plastic wrap; sprinkle pork with 1/4 teaspoon celery salt, 1/4 teaspoon garlic powder and 1/4 teaspoon pepper. Layer with the cheese, spinach and ham. Press down gently., Roll up jelly-roll style, starting with a long side. Tie the roast at 1-1/2-inch to 2-inch intervals with kitchen string. - In a bowl, combine the flour, lemon-pepper, butter and cream until smooth. Stir in the cheese; set aside. Cut a lengthwise slit down the center of the roast to within 1/2-in. of the bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 3/4-in. thickness. , Remove plastic; place ham slices over roast. Spread cheese mixture lengthwise down the center of one side of roast to within 1-1/2 in of ends. Roll up, jelly-roll style, starting with the long side with cheese filling. Tie several times with kitchen string; secure ends with toothpicks. , Combine paprika, marjoram, oregano and basil; rub over roast. Place on a rack in a shallow roasting pan. CHEESE-STUFFED PORK TENDERLOIN
Adapted from "The New Portuguese Table," by David Leite. This recipe makes more red pepper paste than is needed. The remainder can be used on beef, chicken, firm-fleshed fish and even potato halves bound for roasting in the oven.

- To Make the Pepper Paste: Combine the sweet paprika and the smoked paprika, the wine, garlic (to taste), crumbled bay leaves, tomato paste, lemon juice, cilantro, parsley, salt, white pepper and piri-piri sauce (to taste) in the bowl of food processor or blender; pulse until the garlic and herbs are minced, stopping to scrape down any chunky bits from the sides of the bowl or jar.
- With the motor running, add the oil in a slow, steady stream to form a homogenous dark-red paste; this should take 1 to 2 minutes. Use the mixture immediately, or transfer it to a glass jar with a tight-fitting lid and refrigerate for up to 1 month.
- Make the Tenderloin:Use a metal skewer to poke a center channel running the length of each tenderloin half. Widen the channel to about 1/2 inch in diameter, then carefully stuff the cheese into the pork.
- Place the stuffed tenderloin halves in a large (2-gallon) plastic food storage bag, then use a wide knife to cover the meat with the red pepper paste. Carefully invert the bag, holding the tenderloin halves in place, then repeat to cover the rest of the meat, using all of the paste. Season with the black pepper. Seal and refrigerate for 4 hours or up to overnight.
- Position a rack in the middle of the oven and crank up the heat to 400 degrees. Remove the pork from the fridge and let it sit for 20 minutes. Have a large rimmed baking sheet ready, preferably with an uncoated wire rack nested in it.
- Heat the oil in a large skillet over medium-high heat. Add the tenderloin halves (with the paste on them) and sear for 6 to 8 minutes, turning occasionally, until well browned all around. The skillet will be used to make a sauce; drain off any fat and keep it on the stove top (off the heat).
- Use tongs to transfer the tenderloin halves to the rack. Roast for about 20 minutes, or until an instant-read thermometer inserted into the meat (and not into the cheese) registers just under 150 degrees. Let them rest for 5 minutes before cutting. Some of the cheese may ooze out as the meat roasts; this is okay. Use a knife to gently push it back into its channel.
- While the tenderloins are roasting, place the skillet over high heat, then add the white wine. Bring to a boil, using a wooden spoon or spatula to dislodge any browned bits. Add the beef broth and return the mixture to a boil; cook for about 5 minutes, or until the liquid has reduced to 1 cup. Remove from the heat.
- To serve, cut the pieces of each tenderloin half on the bias into 2 pieces. Lay one half in the center of each plate; if desired, lean the other against it at a jaunty angle. Drizzle equal amounts of the sauce over each portion. Garnish with the parsley; serve warm.
