  • In a large skillet, cook and stir the broccoli in oil for 2 minutes or until crisp-tender. Stir in the chicken, soup, milk and pepper; bring to a boil. Reduce heat; cover and simmer for 5 minutes or until chicken is heated through. , Top with the cheese and onions. Remove from the heat; cover and let stand for 2 minutes or until cheese is melted. Serve with rice.

  • In a small saucepan, combine the tomato sauce, Italian seasoning and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Meanwhile, in a shallow bowl, lightly beat the egg. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in egg, then coat with crumb mixture., In a large skillet, cook chicken in oil over medium heat until a thermometer reads 165°, about 5 minutes on each side. Top with mozzarella cheese. Cover and cook until cheese is melted, 3-4 minutes longer. Serve with tomato sauce. If desired, sprinkle with basil and additional Parmesan.

As of right now I haven't tried this recipe, just wanted to put it here so I didn't have to look through all my cookbooks :) If you try this before I do, please let me know if anything should be changed.Sumitted to "ZAAR " on 4/15/09. EDITED: On 9/ 3/ 09, I finally got around to making this recipe and decided to add a bit of garlic powder and a bit more pepper to the finished dish. The amount you decide is up to you. Steps:

  • Put the rice, water, vegetables, and spices in a 9x13 casserole dish. Mix well. The spices I like to use are just a little minced onion and some garlic powder.
  • Cut the chicken breasts in half and place on top of the rice mixture. Dump the soup on top of the chicken breasts.
  • Cover with tin foil.
  • Bake at 375°F for 45 minutes to an hour.
  • Take out of the oven and sprinkle a half cup of cheese on top. Let cool.
