EASY CHEESE BAKED FISH

I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

Easy Cheese Baked Fish image

Steps:

  • Place fish in a greased pan with dabs of butter on top.
  • Season with salt& pepper to taste.
  • (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
  • Pour on milk.
  • Bake at 400 degrees for 12-15 minutes.
  • Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
  • Return to oven until cheese melts.

1 lb fish fillet (I always use haddock)
1/4 cup milk
1/2 onion, thinly sliced (I slice into rings and break them apart and in half if they are too big)

Steps:

  • Preheat the grill to high and lightly oil a large shallow heatproof dish. Arrange the fillets in the dish, slightly spaced apart, and brush them with a little oil. Grill for 2 minutes.
  • Remove the dish from the grill, turn the fish over and top each fillet with a scrunched slice of ham. Mix together the cheese and onions, scatter over the fish and season with salt and pepper. Return to the grill for 5 minutes until the fish flakes easily when prodded with a knife. Serve with green vegetables - broccoli or stir-fried cabbage would be good.

  • Grease a 13 x 9-inch baking pan.
  • Rinse the fillets under cold water then pat dry using paper towels.

  • Heat oven to 200C/180C fan/gas 6 and heat the oil in a large frying pan. Add the leeks and some seasoning, and cook for 10 mins until really soft. Stir in half the parsley and spoon into 2 gratin dishes.

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.

  • Preheat oven to 220 C / Gas mark 7.
  • Boil potatoes in a saucepan till well done. Drain and mash until smooth. Mix in the butter/margarine and season well with salt and black pepper.
  • Remove the skin and bones from the fish and cut into bite size pieces. Place in the bottom of an ovenproof baking dish along with the prawns.
  • Place the leeks/onion and the fish stock in a medium saucepan and cook for 1 to 2 minutes. Sprinkle the flour over and mix well. Cook for a further minute, then add the mustard and beat well. Gradually add the milk, stirring continuously to prevent any lumps from forming. Bring to the boil, allowing the sauce to thicken. Pour sauce over the fish in the baking dish. Allow to cool for 20 minutes, then cover with the mash, either using a fork or piping using a piping bag with a large star shaped nozzle.
  • Top with cheese and bake in preheated oven for 30 to 40 minutes until golden. Just before serving, sprinkle with the chopped parsley. Serve with minted peas and other vegetables.
