EASY 3-INGREDIENT CHEESE PINWHEELS
This is my go-to finger food for any party - it's super quick and easy to make and all you need is puff pastry, cheese, and herbed cream cheese.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Dust a flat work surface lightly with flour. Unroll puff pastry and roll out to a rectangle. Spread a thin layer of herbed cream cheese over the puff pastry. Cover with Swiss cheese slices, leaving a 1-inch border. Roll puff pastry up tightly like a jelly roll.
- Slice puff pastry roll in 1/4-inch-thick slices and lay on the prepared baking sheet.
- Bake in the preheated oven on the center rack until lightly browned and puffed up, 15 to 20 minutes.

PIMIENTO CHEESE PINWHEELS

Steps:
- Combine the Cheddar, pimientos, cream cheese, mayonnaise, cayenne, scallions and 1/4 teaspoon salt in a large bowl. Use a potato masher to mash the ingredients together to make a cohesive spread.
- Lay the tortillas out on a work surface and evenly spread one-third of the cheese mixture on each, leaving a 1-inch border along the edge. Top each with 1 1/2 cups of the arugula. Roll the tortillas tightly, tucking the arugula in as you go. Lay the wraps on a platter seam-side down and refrigerate until firm, at least 1 hour.
- Transfer the wraps to a cutting board. Trim off the edges, then use a serrated knife to carefully cut them into 1-inch rounds. Arrange the pinwheels on a platter and serve immediately or cover with plastic wrap and refrigerate for up to 4 hours.
CHEESY BACON PINWHEELS

- Heat oven to 375°F.
- Unroll dough. Separate dough into 4 rectangles. Firmly press perforations to seal. Turn over dough rectangles and press perforations again if necessary. Spread each rectangle with 1 tablespoon cream cheese. Top each with shredded cheese and chopped bacon.
- Starting at shortest side, roll up each rectangle; pinch edges to seal. Cut each roll into 6 slices with a serrated knife. Place, cut side down, 1 inch apart on ungreased cookie sheet.
- Brush with beaten egg white.
- Bake 11 to 14 min. or until golden brown. Serve warm.

- Heat the oven to 200C/180C fan/gas 6. Mix the cheeses together. Mix through the pickle and English mustard powder. Unravel the pastry on a lightly floured surface, spread the cheese mixture over and tightly roll into a sausage shape from the longest side. Trim off the ends. Cut into 10 rounds and put on a lined baking sheet (swirl-side up), brush with the egg and bake for 15-20 mins or until golden brown. Leave to cool a little before eating.

This is a quick and easy to make appetizer. They go fast!! This is a great potluck treat. Servings are approximate, depends on how many each person eats, but I have never felt like "I didn't bring enough".

- Mix all of the filling ingredients (everything but the tortillas) together thoroughly.
- Divide the filling and spread evenly over the tortillas.
- Roll up the tortillas.
- Tightly wrap individually in plastic wrap, twisting the ends.
- Refrigerate for several hours.
- (I make the day ahead and refrigerate overnight but they taste great within a couple of hours).
- Unwrap and cut in slices, approx 1/2" thick.

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
- In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
- Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
- Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
- Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.
