ROCK STAR CHEESY STUFFED MEATLOAF
This recipe comes from joyouslydomestic.com and is the best meatloaf recipe I've ever come across! I like to stuff the meatloaf with Mozzarella and top it with marinara sauce, making it sort of an Italian theme. You can also use a Mexican blend of cheese and top with salsa, so there are many ways to go with this recipe! I sometimes use croutons that you can buy at the store instead of the saltines. Just put them in a bag and crush them with a rolling pin and measure the same as the saltines. Times are approximate.

Steps:
- Preheat oven to 350 degrees.
- Spray a loaf pan with non-stick spray.
- Combine all of the ingredients except for the cheese in a large mixing bowl. Do not over mix.
- Divide the meat mixture in half.
- Spread half of the meat mixture onto the bottom of the loaf pan.
- Lay down the slices of mozzarella cheese and top with the shredded cheese.
- Spread out the other half of the meat mixture on top of the cheese being careful not to disrupt the cheese layer too much. You can run a rubber spatula down the sides to really press the meat in towards the loaf to help seal everything inches You really want to seal in the cheese so that it doesn't ooze out.
- Squirt some of the reserved ketchup onto the top of the loaf. Spread it with a spatula, if desired.
- Bake, uncovered for 1 hour.
- Allow to rest for 5 minutes before slicing and serving. Plan to eat immediately upon slicing so that the melted cheese does not cool too much and firm up.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. - Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
- On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.

This was excellent - my children loved it - here is an added hint - my kids hate mushrooms; I'm not that crazy about them either. So I took my food chopper and chopped them to tiny pieces - the kids ate the meat loaf and never knew there were even mushrooms in it! To me I thought this kind of tasted like a Hot Italian Sausage.

- Heat oven to 375 degrees.
- Line a 15 x 10 x 1" cookie sheet with foil; spray foil with cooking spray.
- In a large bowl, beat eggs, stir in ground beef, breadcrumbs, cheese, seasonings and ¾ Cup pizza sauce.
- Mix until well combined.
- Place meat mixture on foil and shape into a 12x10" rectangle.
- Sprinkle onions, peppers, mushrooms and cheese over top of meat mixture - this will resemble a pizza.
- Starting at the 10" side, roll up - jellyroll style.
- It helps to roll with the foil - then peel it away.
- In a deep casserole dish, line it with foil, I even went up the sides.
- Due to the cheese this makes for easy clean up!
- Place meat loaf seam side down on foil.
- Bake for 45 minutes.
- Remove from oven; spoon the remaining pizza sauce over the loaf.
- Return to oven and bake 20 - 30 minutes or until loaf is thoroughly cooked in center.
- Let stand a few minutes before slicing.
