BAKED JACKET POTATO WITH BAKED BEANS AND CHEESE
This is such a simple, quick meal. It's a very British way to serve a baked potato! Baked beans here are different than in the US so if you can get a British brand, the recipe would be more authentic. British beans are cooked in a tomato sauce with no BBQ flavour. That said, I'm sure this would be yummy with BBQ beans as well!

Steps:
- Preheat the oven to 350°F or 180°C.
- Bake the potatoes as per your personal preference- I bake them in the oven for about an hour, until the skins are firm and the centres are soft. You may like to smear with butter, sprinkle with salt and wrap in foil.
- Towards the end of the potatoes' cooking time, heat the baked beans in a pan on the stove, until hot.
- Remove the potatoes from the oven, cut into quarters without cutting the whole way through. Squeeze the outside of each quarter to "pucker up" the flesh.
- Pour the desired amount of baked beans over the potato and sprinkle with grated cheddar.
- Sprinkle with salt and pepper to taste and serve!

CHEESY BAKED BEANS IN BAKED POTATOES
Being a Kiwi my favourte baked beans are Watties! Cabanossi can be used instead of salami. For anyone that doesn't know Cabanossi is a type of dry sausage, similar to a very mild salami. It is made from pork and beef, lightly seasoned and then smoked. It is commonly cut into bite sized chunks and eaten cold as an appetiser or snack, often with cubes of cheese and crackers. Sliced cabanossi is also a popular pizza topping.

Steps:
- Preheat oven to 180°C.
- Line a baking tray with baking paper.
- Pierce potatoes in several places with a skewer.
- Arrange on turntable of microwave oven and cook on high for 12-14 minutes or until tender.
- Meanwhile in a small bowl combine salami, cheese and chives.
- Cut a small slice off base of each potato to allow them to sit flat.
- Using a teaspoon, scoop out about 1cm of potato centre.
- Chop excess potato and mix with salami mixture.
- Place potatoes on prepared tray and spoon an even amount of baked beans into each potato.
- Divide salami mixture between potatoes.
- Bake for 10-15 minutes until topping is crispy.

TWICE-BAKED POTATOES WITH CRISPY PORK BELLY AND CHEDDAR CHEESE

- For the potatoes: Preheat the oven to 400 degrees F.
- Make a bed of salt on a quarter-sheet tray and place the potatoes on top. Bake until tender, about 1 hour. Slice the potatoes in half lengthwise, then hollow out the skins, scooping the flesh into a bowl. Add the cream, butter, egg yolks and cheese to the potato filling and mix thoroughly.
- For the pork belly: Meanwhile, turn the heat under a large stovetop pressure cooker to medium-high and add 2 tablespoons oil, along with the onions and garlic. Allow to sweat, about 3 minutes. Add the juniper, allspice, clove, mustard seeds, peppercorns and bay leaves and stir to combine. Pour in the beer and stir in the soy sauce and brown sugar. Bring to a simmer, then gently add the pork belly. Carefully secure the pressure cooker lid and bring to high pressure over medium-high heat. Cook at pressure for as long as it takes for the potatoes to cook, 45 minutes to 1 hour. Turn off the heat and carefully run the pressure cooker under cold water until cool enough to open. Open and remove the pork.
- Preheat a deep-fryer or a large Dutch oven with oil to 350 degrees F.
- Set aside some of the pork pieces for garnish, glazing with what is left in the pressure cooker. Fry the pieces in batches until crispy, 2 to 3 minutes.
- Chop the crispy fried pork into chunks, then fold them into the potato mixture. Spoon the potato mixture into the potato skins and bake until crispy and browned, about 15 minutes. Top each with any remaining pork belly pieces and green onions.
CHEESY TWICE-BAKED POTATOES
Steps:
- Preheat the oven to 425 degrees F. Pierce the potatoes with a fork or paring knife a few times on all sides. Place on a baking sheet and bake until fork-tender, 60 to 80 minutes. Let cool slightly (but keep the oven on).
- Meanwhile, melt the butter in a small skillet over medium heat. Add the garlic and shallot and cook until softened but not browned, about 2 minutes. Set aside.
- Once the potatoes are cool enough to handle, cut them in half lengthwise. Using a spoon or melon baller, scoop out the flesh, leaving a 1/4-inch rim to preserve the shape of the shells.
- In a large bowl, mash the potato insides until mostly smooth. Add the butter mixture, sour cream, chives and 1 cup cheese and mix together. Season with salt and pepper to taste.
- Spoon the mixture evenly into the 8 potato shells. Top with the remaining 1 cup cheese. Bake until the cheese is golden brown and bubbly, 25 to 30 minutes. Top with more chives. Serve warm.
BACON CHEDDAR BAKED POTATO RECIPE BY TASTY

- Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.
- Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.

- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. Let cool enough to handle, about 10 minutes.
- Increase oven temperature to 475 degrees F (245 degrees C). Line a baking sheet with foil.
