MIRACLE MANGO SALSA CHICKEN

Steps:
- Preheat a large cast-iron skillet over medium-high heat.
- Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
- Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
- Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.
SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

MILLION DOLLAR CHICKEN CASSEROLE
Creamy and incredibly savory, it's a casserole that's hard to stop eating. The cottage cheese is the trick to getting such a creamy, melty texture. Using rotisserie chicken is a must for the recipe and helps keep it quick.

- Preheat the oven to 350 degrees F (175 degrees C).
- Stir together cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium bowl until well blended and smooth. Fold in chicken, chopped onion, and parsley until evenly coated.
- Stir together crackers, melted butter, and remaining 1/2 teaspoon garlic powder in a medium bowl.
- Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish. Sprinkle evenly with mozzarella then cracker mixture.
- Place on a foil-lined baking sheet and bake in the preheated oven until crackers are golden brown and edges are bubbly, about 40 minutes. Cool for 10 minutes before serving; garnish with scallions if desired.

MILLION-DOLLAR SALSA CHICKEN
This recipe is a Pillsbury Bake-Off winner from 1997. I make it with chicken or pork. You can substitute many ingredients, but don't change out the spices - they're what make this dish unique. It's a great party dish.

- 1. Cook coulscous as directed on package. Keep warm
- 2. Meanwhile, heat oil in lare skillet over medium-high heat until hot. Add almonds, and cook 1 to 2 minutes or until golden brown. Remove from skillet and set aside.
- 3. Add garlic and chicken to skillet; cook 4 to 5 minutes until chicken is browned, turning once.
- 4. In a small bowl, combine salsa and all remaining ingredients; mix well. Add to chicken. Reduce heat to medium; cover and cook 20 minutes or until chicken is done, stirring occasionally.
- 5. Stir in almonds; serve chicken and juices over couscous.
- 6. Notes: For flavorful couscous, cook it in chicken or vegetable stock instead of water. Substitutes: Use pork chunks instead of chicken, use prunes, apricots, dates or figs as the dried fruits. Use pine nuts instead of almonds if desired.
THE STANDARD GRILL MILLION DOLLAR CHICKEN

- The day before you plan to cook the chicken, season it well inside and out with salt and pepper. Stuff the cavity of the chicken with the garlic, 1 of the lemons, the bay leaf and thyme. Refrigerate.
- (The bird can be trussed with butcher twine if you are so inclined, but it is not necessary.)
- On the day/night you plan to cook the bird, take the chicken out of the refrigerator 30 minutes before you plan to roast it. Preheat the oven to 425 to 450 degrees.
- In a pan large enough to accommodate the chicken, oil the pan lightly with olive oil, place the piece of sourdough in the center of the pan and then put the chicken on top of the bread.
- Drizzle the bird with olive oil or brush with butter (we use olive oil at the Grill).
- Place the pan in the oven and roast for 40 to 50 minutes, basting it every 12 to 15 minutes with the fat and drippings that render from the bird.
- White the chicken roasts, assemble the glaze by combining all of the ingredients and whisking them together.
- When the chicken is almost done (the juices are running pink and/or the legs are beginning to wiggle a bit when you give them a shake), take a pastry brush and slather on a bit of the creme fraiche glaze. The glaze will begin to caramelize. Brush on another layer and let this last glazing caramelize.
- At this point the chicken should be cooked through and nicely golden brown. The sourdough underneath the chicken will be nicely browned and crisped on the side in contact with the pan, and moist and juicy on the side in contact with the chicken. Let the chicken rest for 10 minutes before cutting it into serving pieces. Cut the sourdough into 2 to 4 pieces and serve with the chicken.
- Garnish with lemon wedges and sprinkle it with Maldon salt.
- (Alternatively, you can roast the chicken almost entirely through. Let it rest, split it in half and then glaze it with the creme fraiche under the broiler, brushing with the creme fraiche until you achieve golden brown, crackling skin.
MILLION DOLLAR CHICKEN - MOROCCAN STYLE
This recipe originally won first prize ($1 Million) in a national cook-off of some sort (I think Pillsbury) several years ago. I can see why - it is a wonderful combination of flavours. The recipe is quite easy to make and is very economical. I have also substituted the chicken thighs for boneless, skinless breasts and it works just fine. The thighs are definitely better though as they are more moist. Do try this - you'll love it.

- Heat oil in skillet over medium high heat until hot.
- Add almonds and cook until golden brown.
- Remove with slotted spoon and set aside.
- Add garlic and chicken to same skillet that almonds were cooked in.
- Saute, turning once, for 5 minutes or until browned.
- Mix together salsa, water, currants, honey, cumin and cinnamon.
- Add mixture to chicken and stir well.
- Reduce heat to medium, cover and cook.
- Stir and baste occasionally for 20 minutes.
- Add more water if necessary.
- Serve over couscous or rice.
- Top with chopped almonds.
