CHEESY BEAN DIP
This is a great cheese and bean dip like those found in some mexican restaurants. Everyone we know who has this can't stop eating it, and begs us to make it for them.

Steps:
- Combine cheeses and milk over medium low heat and stir until smooth and creamy.
- Add beans and jalepenos and stir until uniform consistency.
- Pour into a bowl and serve with tortilla chips.
- If you use the pepper jack cheese, you may not need to add any additional jalapenos.
- This makes enough for any picnic or BBQ, if you want to cut the recipe, just keep the cheeses and milk in equal thirds, and add beans to taste.

- In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.
- Add salt, pepper, bayleaf, diced tomatoes and beans. Simmer 20 minutes on low.
- Remove bay leaf, mash about 1/2 of the beans and tomatoes.
- Add rice, stir until combined.
- Sprinkle on cheddar cheese, cover and allow to cook on low until cheese is melted.

- Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt. Bring to a boil; remove from the heat., In a 2-qt. baking dish coated with cooking spray, layer a third of the rice mixture, cheese and tomato mixture. Repeat layers. Layer with remaining rice mixture and tomato mixture. , Cover and bake at 350° for 30 minutes or until heated through. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.

- In a large skillet over medium high heat, combine the ground beef and salt and pepper to taste.
- Sauté for 10 minutes, or until well browned.
- Add tomato sauce, onion and Worcestershire sauce.
- Reduce heat to low and simmer for 10 minutes.
- Prepare potatoes.
- Place beef mixture into a casserole dish.

- In a medium skillet, heat oil over medium heat. Add onion, garlic and jalapeno peppers; saute until onions are soft, about 3 minutes.
- Add beans and smush with the back of a spoon or potato masher until softened and heated through, another 2-3 minutes.
- Remove from heat; stir in shredded mozzarella or Oaxaca cheese, sour cream, cumin and cayenne pepper, stirring until cheese is melted.
- Season with salt and pepper to taste.
- Transfer to a serving dish and sprinkle Cotija or feta on top. Serve warm or at room temperature with chips and/or vegetables.
- Leftover dip can be refrigerated and reheated in a microwave.

- Heat a dash of oil in a large wok, and add the onion and garlic. Cook over a medium heat for a few minutes, until soft and translucent. Add the arborio rice, and cook for another minute or two. Next, add the vegetable stock a little at a time, stirring regularly and allowing most of the excess liquid to be absorbed by the rice before adding more - it should take around 20 minutes in total. The rice should be almost cooked.
- When you've added all of the stock, add the drained beans, chopped tomatoes, and tomato puree. Mix well, and allow to simmer for another 10-15 minutes, until not too much excess liquid remains. Add about 3/4 of the grated cheese, and plenty of black pepper, and mix again to melt the cheese.
- Transfer the mixture to a large baking dish, and top with the remaining grated cheese. Bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until cooked to your liking. For a slightly firmer bean bake, allow to stand for 10 minutes before serving.
