CHEF MONK'S BETTER'N BUSH'S BAKED BEANS

CHEF MONK'S BETTER'N BUSH'S BAKED BEANS image

Steps:

  • 1) Soak the beans overnight in water in the refrigerator, or quick soak by boiling for 5 minutes, let sit for an hour, discard water. 2) Bury the neck bones in the beans then cover with water until all is underwater. 3) Put on as low a gas flame as possible. If you don't have gas, move. 4) Cover and simmer. 5) Every five or ten minutes add an ingredient until they're all in there. Don't wear yourself out. 6) Stir each in with a teaspoon. Very important. 7) Simmer this all day. Or as long as you can stand it. The longer the better. Add water s necessary so they don't stick or burn. Don't skimp adding on the water. You can always serve with a slotted spoon. 8) When the place smells so good you can't stand it and the beans are tender. serve and enjoy. 9) Bean-O on request

1 pound dry great Northern beans - aka Yankee Beans
Splash of olive oil - maybe a teaspoon
A baseball sized onion - coarsely chopped
1 - 2 teaspoons garlic powder 1 teaspoon dry Thyme
A full up to the first knuckle pinch of red pepper flakes
1/2 cup REAL maple syrup, not the fake stuff
1 8 oz. can tomato sauce
Couple splashes of Worcestershire sauce (less if less sodium desired)
1 tablespoon mustard powder
1 to xx FRESH pork neck bones (not smoked). Some people use a ham hock or few, I like the neck bones, they're sweeter. You might have to shope where the poor people do to get them.
A bay leaf, break it in half for good luck, VERY important
1 teaspoon black pepper or to taste

"BETTER THEN BUSH'S" BAKED BEANS

I'd have to say that this is a labor of love dish, but I give you my word that this recipe is better than Bush's. Enjoy! Oh, and also this recipe is easily doubled. In fact, I think it turns out better when it is.

Steps:

  • In a very large sauce pan cover the beans and bouillon cubes in 3 inches of water.
  • Bring to a boil, cover, and let sit for 1 1/2 hours.
  • Preheat oven to 350 degrees F.
  • Drain and pour beans into a 9'x11' pan.
  • Add the rest over the ingredients, stir, and bake until all the water has evaporated, about 3 hours.
  • Remove from oven, cover, and let sit overnight.
  • Preheat oven to 350 degrees F.
  • Add the next 5 cups of water, and bake until all the water has evaporated, about 3 hours.
  • Serving suggestions: Challah bread, steak, hamburgers.

4 chicken bouillon cubes or 4 beef bouillon cubes
1 1/4 cups dark brown sugar
1/4 cup molasses
1/4 cup cornstarch
1/4 cup onion
1/4 cup garlic powder

THE BEST BARBECUE BAKED BEANS

It's not a real barbecue until a dish of baked beans shows up! While there are many different versions and many different techniques, I'm here to tell you that these are the best. These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. Sprinkle the top with sliced green onion if you like.

The Best Barbecue Baked Beans image

Steps:

  • Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
  • Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
  • While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
  • Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.
