CHERRY-CHOCOLATE LOAF
I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
- Whisk flour, salt, baking powder, and baking soda together in a bowl.
- Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
- Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
- Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
- Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
- While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
- Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

- In a small bowl, soak cherries in hot water for at least 10 minutes., Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the oats, flour, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the chocolate chips and cherries with liquid., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks.

- Preheat oven to 375°F
- Whisk together flour, baking powder, cinnamon, and salt in a small bowl.
- Beat together butter and sugars in a large bowl with an electric mixer until blended and add eggs, 1 at a time, beating well after each addition, and vanilla.
- Beat in flour mixture on low speed until blended well, then mix in chocolate chips and cherries with a wooden spoon.
- Put level tablespoons of dough 1‚ inches apart on greased baking sheets and bake in batches in middle of oven until golden around edges, 12 to 15 minutes.
- Cool on sheets 2 minutes before transferring to a rack to cool completely.

- Preheat oven to 300 degrees F (150 degrees C).
- Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).
- Drop by rounded teaspoonful onto ungreased cookie sheets and flatten slightly with fingers. Bake for 12 minutes. Remove immediately from cookie sheets and onto wire racks to cool.

- Preheat oven to 375 degrees F.
- In a small bowl, sift together flour, salt, soda and cinnamon. Set aside.
- In a large mixing bowl, cream together butter and sugar until light-colored and fluffy.
- Add eggs, one at a time, beating until well-combined after each addition.
- Beat in vanilla extract.
- Gradually mix in dry ingredients, beating just until incorporated.
- With a spoon or rubber spatula, stir in nuts, cherries and chocolate morsels.
- Spread into a 1/4 sheet pan, 15" x 10" (or two 11' x 7" brownie pans) and bake for 20 - 25 minutes, until golden brown.
- Cool in the pan on a wire rack and cut into bars about 2" x 1.25".
- Stir last three ingredients together to make a thin glaze, adding more liquid if necessary. Drizzle glaze over cooled bars and allow to harden before serving.
- Note: Glaze can be easily changed to suit your taste. Swap the milk for water, cherry juice, almond milk, or a flavored liqueur. Swap the almond extract for another flavor, or leave it out entirely if using a flavored liquid.
