CHERRY PEANUT BUTTER BALLS
Years ago, I saved this festive recipe and made it only at Christmastime. But my grandkids loved the sweet combination of peanut butter, chocolate and cherries so much that now I mix up a batch anytime they ask or visit!

- In a small bowl, beat the butter and peanut butter until smooth. Beat in vanilla. Gradually add confectioners' sugar and mix well. Cover and refrigerate for at least 1 hour. , Pat cherries dry with paper towel. Dust hands with additional confectioners' sugar. Wrap each cherry with a rounded tablespoon full of peanut butter mixture; shape into a ball. (Peanut butter mixture may need to be refrigerated occasionally while rolling cherries.) Cover and refrigerate for at least 1 hour. , In a microwave, melt chocolate chips and shortening; stir until smooth. Dip peanut butter balls in chocolate; allow excess to drip off. Place on waxed paper. Refrigerate for at least 1 hour or until set.

NO-BAKE ENERGY BITES WITH OATS AND DRIED CHERRIES
These coconut- and oat-studded bites come together in just one bowl (no food processor required!). Keep them on hand for a healthy morning or afternoon pick-me-up or a satisfying after-school snack. If your family or school is nut-free, follow the sunflower butter option instead of using almond or peanut butter.

- Stir honey, cinnamon, vanilla, salt, and 3 Tbsp. hot water in a medium bowl until smooth and incorporated. Stir in oats and coconut and let sit 10 minutes.
- Fold in cherries and almond butter and stir thoroughly to combine.
- Scoop mixture by the level tablespoon and roll into balls in between your palms. Transfer to a plate or rimmed baking sheet and chill at least 30 minutes before serving.

- Bites can be made 10 days ahead. Transfer to an airtight container and chill, or freeze up to 3 months.

CHERRY NUT BALLS
I love maraschino cherries and coconut. These are so easy that the kids can prepare them and they are great to have in the fridge for a pop in the mouth snack! We usually double this and use a cookie scoop do depending on how big (or small) you make them is how many you will get. Cooking time is chilling time.

- Tip from Lynn: These make such a beautiful presentation..the picture is so yummy to look at on the website. I would also suggest if you would like, try adding a drizzle of melted white chocolate on the top of the balls.., you could even do a red drizzle..add oil based food coloring, by Wilton, to the melted white chocolate, even green..use your imagination.
