CHERRY PIE STREUSEL JUMBO MUFFINS
Wonderful for Valentine's Day or a special brunch. Serve warm, dusted with powdered sugar and a scoop of vanilla ice cream--yummy!

Steps:
- Preheat oven to 400*F.
- Grease 6 jumbo muffin cups, or line with jumbo paper liners.
- STREUSEL: In a small bowl, stir together the flour, almonds, brown sugar, cinnamon, and salt.
- Cut the butter into 1/2" cubes and distribute evenly over the flour mixture; cut butter in until mixture is crumbly.
- Set aside.
- MUFFINS: In a large bowl, stir together the flour, sugar, baking powder, and salt.
- In another bowl, stir together the milk, melted butter, egg, vanilla, and almond extracts.
- Make a well in the center of the flour mixture; add the milk mixture and stir just until combined.
- Do not overmix.
- Divide a little less than 1/2 the batter amongst the prepared muffin cups, spreading to cover bottoms.
- Place 1 Tbsp. of pie filling in the center of each cup, being careful to avoid the sides of the cup.
- Set aside 1/2 cup of the streusel; sprinkle remainder over the pie filling.
- Cover with remaining batter, top each with another 1 Tbsp. of pie filling; sprinkle remaining streusel over tops.
- Bake for 25-30 minutes, or until tops are lightly browned and a toothpick inserted in a"batter" section comes out clean.
- Cool 10 minutes in pan on a wire rack before inverting; cool completely.
- Serve warm, or cool completely and store wrapped airtight in the refrigerator.
- Bring to room temperature before serving.

- Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
- Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
- Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
- Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.
- Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.

- In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until the mixture resembles coarse crumbs. Beat the egg, sour cream and extract until smooth; stir into dry ingredients just until moistened (batter will be thick). , In a large bowl, beat cream cheese, egg, sugar and vanilla until smooth. In a saucepan over low heat, warm preserves. For topping, combine flour and sugar in a small bowl; cut in butter until crumbly. Stir in almonds., Fill greased jumbo muffin cups half full with batter. Divide cream cheese filling and preserves evenly among muffin cups; swirl gently. Cover with remaining batter. - Preheat oven to 375°.
- Grease 12 standard muffin cups with butter or butter-flavored nonstick cooking spray.
- Streusel--stir together the brown sugar and flour in a small bowl.
- Using a pastry cutter or your fingers, cut or rub in the butter until the mixture is crumbly.
- Stir in the coconut; set aside.
- To make the muffins--in a bowl, stir together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, and half-and-half.
- Make a well in the center of the dry ingredients and add the egg mixture.
- Beat until thick and creamy.
- The batter will be slightly lumpy; do not over mix.
- Spoon the batter into each muffin cup, filling it one-third full.
- Drop in a few cherries, add batter just to cover, and then drop in a few more cherries.
- Spoon on more batter until the cups are filled level with the rims.
- Sprinkle each with 1 heaping tablespoon of coconut streusel.
- Bake until golden, dry, and springy to the touch, 20-25 minutes.
- Transfer the pan to a wire rack and let cool for 5 minutes.
- Unmold the muffins; serve warm or at room temperature.

- Preheat oven to 375 degrees F (190 degrees C). Line a 12 cup muffin pan with paper baking cups.
- Stir together the baking mix, white sugar, egg, and milk in a bowl just until combined. Stir in 1/2 of the cherry pie filling. Fill the lined muffin cups 2/3 full. Top each muffin with 3 cherries from the remaining cherry pie filling.
- Mix flour, brown sugar, melted butter, and cinnamon together in a small bowl with a fork until crumbly. Sprinkle evenly over unbaked muffins.

- Heat oven to 375°F. Grease bottoms only of 6 jumbo muffin cups (3 1/2x1 3/4 inch) or 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line muffin cups with paper baking cups.
- In medium bowl, beat milk, oil and egg with fork. Stir in remaining ingredients except cherries, juice and powdered sugar just until flour is moistened. Stir in cherries. Divide batter evenly among muffin cups. (For 12 regular-size muffins, cups will be almost full.)
- Bake jumbo muffins 23 to 25 minutes, regular-size muffins 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool jumbo muffins 10 minutes or regular-size muffins 5 minutes; remove from pan.
- In small bowl, mix powdered sugar and reserved 2 tablespoons cherry juice with spoon; drizzle over warm muffins. Serve warm.

- Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups.
- In medium bowl, mix all topping ingredients except butter. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Set aside.
- Chop cherries; set aside. In large bowl, mix 1 1/3 cups flour, the granulated sugar, baking powder and salt.
